baby Dego wakes up so happy!  his mood is crazy contagious and always reminds me of this quote:

'Children are happy because they don't have a file in their minds called, 'Everything That Could Go Wrong.'

decisions, decisions! i start craving those weekend foods... pizza, french fries, subway cookies, etc.  i guess that's where my passion for making healthier versions of classic comfort foods came from though.  i want to satisfy that craving (more often) without sacrificing my health or gym progress.  fair enough!?  i'm so glad we have tons of healthier alternatives to work with and swap out these days! anyway,  i have been having some stiffness in my neck, so i hit the gym for cardio only and stretching for my saturday workout.  will be taking it easy so i can hit it hard again on tuesday for my HIIT class.

i stopped by Sprouts after the gym and picked up some protein: 99% lean ground chicken breast and Applegate organic chicken and apple sausage for breakfast next week.  i cracked open the sausage as soon as i got home though and had a filling post-workout meal of whole wheat toast, egg white/veggie/sausage scramble,  and kiwi (low sugar ketchup & cheddar almond cheese on the side). delish!!!!

oh, i got some pears too!  they were next in line to try for Dego's homemade baby food.  i just diced up 1 anjou pear, threw it in a small sauce pan with 2 tbsp water and 1/2 tsp cinnamon, covered it, and cooked it on med-low until tender.  after less than 10 min, i poured it all into my Ninja and pureed the mixture until it was super smooth.  pears = thumbs up!

then, we turned UP!!!!

boy: a noise with dirt on it

a mommy-friend of mine invited the boys and i to toddler story time at a local library recently.  actually, she invited us weeks ago but i finally got it together enough on my end so that we could attend. it was a morning event so i got up super-duper early just to ensure we'd make it. a lil late, but we made it.  i feel like i have to start getting everybody ready like 3 hours before we have to be somewhere, seriously.  and when we are rarely making good time, Chiso suddenly has to go go to the restroom as i am loading up the car or Dego throws up on us.  never fails!  but hey, we made it AND we even got a nice breakfast in!

i had egg whites with black pepper, mozzarella almond cheese, a little homemade guacamole, low-fat turkey sausage, and french toast with strawberries!  big breakfast to support my activity levels these days which includes hitting the weights again, nursing around the clock, and keeping up with my 3 yr old. among other things.

Chiso has requested pancakes for like 2 weeks straight now. maybe even longer than that.  so made him some sprinkled with mini chocolate chips, sugar-free syrup, and a little fat-free Redi Whip.

 our first official outing together.  we did it!! we're pros now. i actually avoided leaving the house with both boys for the longest...but the saying is true. 'ain't nothin' to it but to do it.' after that? piece of cake! for the most part. thinking, i.e. worrying, about every single thing that could go wrong is no way to live. i've learned to be prepared, prayerful, and cautious, not crazy.  Chiso's independence could not have come at a better time though. for him to be able to get in and out of the car himself, clean up his toys and messes, retrieve and/or throw away Dego's diapers, and turn on the bathroom light so i don't have to get up lol helps out big time. sigh...no more baby Chiso!

just another one of those bittersweet mommy moments.

well all that fun didn't result in a nap at our house, but Chiso enjoyed himself and has asked to go back countless times now. Maranda is a pro at finding free & fun stuff to do around our city, and i recently came across Houston on the Cheap with even more ideas galore.  check it! CYMERA_20140729_221917

i got to bed way too late so my early gym date was definitely out this morning. i hit the streets for some sprints once Sonny got home instead. i haven't run full speed in almost a year and i'm sure i'll pay for it tomorrow and the next day!  i did ladders:

i started slow and only went 'down' the ladder from 5 to 1.  that was all i had, woof.  also, here are two foodie items being adding back into my diet that i've posted about before: almond cheese (gotta cut down on the dairy cause of bloating) and calorie-free Grey Poupon mild & creamy mustard. i got great feedback via Instagram about Daiya vegan cheese so i'm gonna step out and try that brand next.

oatmeal chocolate chip birthday cakes!!! - bday post

this year, my birthday fell on a monday. YIPPEEEEE :?

so Sonny started celebrating early (like i had hoped).  immediately after church service, we went to get our rings cleaned.

i promise we're only in our thirties. lol.  Chiso saw us placing our hands strategically on the display case for this pic and wanted part of the action.

over time, i have come to the realization that i'm a hint thrower.  what a lucky guy Sonny is.  rarely does one go over his head though, i gotta give it to him.  i forwarded him a Ruggles Green brunch email i received a few weeks earlier, you know, randomly.  high-five, Sonny.  high-five.

so that was our next stop.  only the Heights location serves breakfast / brunch in Houston, and i had been eager to check it out for months.  i chose the delish crab & avocado omelette and Sonny played it safe with the breakfast plate (sausage, pancakes, eggs, potatoes).  Chiso handled up on his turkey sausage, scrambled eggs, and pancakes too.  we love us some eggs.

the next day, my actual birthday, Sonny got up and rushed off to work like normal, so i hit the gym early, like normal.

but not before making this gorgeous stack of oatmeal pancakes! with the start of my cooking classes, blogging took a small backseat. obvi. but i believe i have a routine going now with my schedule. *crosses fingers, toes, and eyes*.  here's that recipe:

Oatmeal Chocolate Chip Pancakes 

the stuff: (source)

  • 3/4 cup whole wheat pastry flour
  • 1/4 cup dry rolled oats
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 3/4 cup unsweetened vanilla almond milk (add more if needed- you be the thickness judge)
  • 2 packets granulated stevia
  • 1 tbsp agave nectar or honey (optional)
  • dash of sea salt
  • 1 tbsp melted coconut oil
  • handful of dark chocolate chips

do this:

  1. mix all ingredients except chocolate chips together in a large mixing bowl.
  2. if ya need more almond milk at this point, add it a tbsp at a time.
  3. heat your griddle or cast iron / no-stick skillet to medium heat and coat with no-stick cooking spray.
  4. spoon the cakes onto your cooking device as large or as small as you'd like them.  when bubbles start to form on top, check the bottom of the cake to see how brown it is first before flipping.
  5. you're looking for a golden brown color (bout 2-4 minutes).
  6. eat'em up. sprinkles are optional but mandatory if it's your birthday.

or, you can do blueberries instead of chocolate chips!

i took a Barbell Strength class and worked my back a little more on my own in addition to some steady-state cardio on the elliptical. suddenly, i got a 'lunch?' text from Sonny, so i said 'screw this!' and sped home to get cleaned up.

   Sonny shocked our palettes and drove us to an Indian inspired restaurant in Upper Kirby called Ponidicheri.  he didn't know it was 'meatless monday' though lol. tasty  nonetheless and i appreciate the experience.

 Sonny got an omelette too.  They didn't really have a kids menu, but the guy taking orders suggested this concoction.  can you guess which two Chiso ate? yep, the fries and the Elephant Cookie.

i got a birthday nap back at home (YAAAAAY for daytime sleep) and we went back out for dinner that evening.  i was actually still full from lunch but went anyway just cause it was my bday and already on the agenda.

my cups runneth over :shock: ! literally and figuratively.  we concluded the evening with Italian food and Neapolitan gelato from Sapore Ristorante, right in our own backyard.  which was awesome cause i had to be up at 4:15am  to teach my class the next day.

i feel like i'm at the age where i forget what i'm even turning and that my birthday is even coming up.  thankful to God for another year though, no doubt, and for Sonny's impeccable planning skills year after year.

it's no longer weird feeling this way once you know the culprit!  this was prolly one of the most puzzling and straight annoying bumps along my ever-evolving fitness journey. identifying trigger foods (foods that trigger reactions in a person e.g. gluten sensitivity = celiac disease) can be helpful in relieving certain ailments, eliminating excess weight, or preventing IBS (tummy issues e.g., uncomfortable, painful, gas, bloating, fluffiness, etc).  how do you pinpoint them? conduct a little experiment on yourself.  remember, health and fitness is all about trial and error.  find out what your body benefits best from and stick with it☝. first,

  • keep a food dairy
  •  track what you eat
  • track when you eat 
  • take note of how you feel afterwards

after a few weeks (yep, this takes time but the process is always worth it) you should be able to see a pattern. once you have identified a possible trigger food, eliminate it from your diet for two weeks straight.  was there a change? mentally? physically? add that particular food back in and pay close attention to your reaction, if any. once these foods are identified, they can either be avoided easily, completely, or at the very least, finally give you some dang answers!!!  my trigger foods are dairy,  broccoli, and Kashi.  i haven't cut them out completely, but i know when not to eat them, that's for darn sure.  no two piece swimsuits or form-fitting clothing for me for a few days!  hope this helps someone else as much as it has helped me.  learning your body is a process, fit friends. and fyi, i had some chicken pizza from Ruggles Green with a bunch of crème fraiche, mozzarella and fontina cheeses on it a few hours before the right pic. it was so worth it lol.

sunday dinner

my 'rents came over to love on their grand baby this past weekend! so of course i whipped up a few things.

i started with a HUUUGE salad complete with romaine mix, fat-free feta, black olives, red, yellow, and orange bell peppers, tomatoes, cucumbers, and carrots all drizzled with Braggs liquid aminos, Braggs apple cidar vinegar + a little agave nectar,

and i used up the rest of a papaya to make some papaya-lime salsa.

here's the original recipe again, but i added strawberries and avocado this time and it was SO much creamier.  i highly suggest adding them every time!

this stuff is fabulous paired with seafood!  and if you make enough of it, whip out some multi-grain chips or make your own by slicing up a whole wheat tortilla and baking it in the oven until crispy.

for dessert, cinnamon.... apple.... almond cake!  the stuff on top is apple whipped cream.  it's sugar-free, fat-free cool whip, diced red delicious apple, and greek yogurt) all blended into a sweet, light, heavenly topping.  oh AND, i grinded on some of Trader Joe's cinnamon sugar ;)

cinnamon apple almond cake

the stuff:

  • 4 tbsp diced apple
  • 3 tbsp whole wheat flour
  • 1/4 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 tsp coconut oil
  • 1 tbsp applesauce
  • 1/2 tsp apple pie spice
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 2 tbsp unsweetened vanilla almond milk
  • 1 tsp coconut crystals

do this:

set 1 tbsp of the diced or sliced apples aside along with the coconut crystals, and set your oven to 325 degrees.

mix the wet with the wet and the dry with the dry, then combine.  (i made two cakes using my cupcake pan.)

distribute the coconut crystals evenly in the bottom of the two empty cupcake slots, as well as 2 tbsp of the diced/sliced apples (1 tbsp in each slot).

pour the batter on top!

cook for 12-15 minutes, but watch it closely.

take the cakes out, let them cool slightly, then flip them over onto a plate, pineapple upside down cake style.  yummmmmmmy!

top with the apple whip, or eat it plain.

2 'cup'cakes or 1 big one applecakecoconutoil

**you DON'T have to use the coconut oil if you don't want to!**  i included the nutritional adjustments just in case you omit it, but it does enhance the flavor and texture of the cake a lil bit.  your call.
