meatballs with my mama♥️: Butterball Savory Coconut Curry Meatballs
/this recipe is super special to me cause i made it with my mommy ♥️. she was over visiting her grand babies and we did a “meatballs with mom” kinda thing for dinner one night! we used Butterball Farm to Family lean ground turkey and made my dairy-free Savory Coconut Curry Meatballs.
Sonny was our camera man of course and kept us laughing the entire time!
my mom was my first blog reader and i’m sure she has read every single post since i started in 2012. many people think i grew up cooking for my family but nope. i watched my mom do her thing (she was a SAHM until my brother and i were in middle school) and i only helped her in the kitchen when she asked. other than that I was outside playing basketball or skateboarding in the front yard, ha. i was taking mental notes though! let’s just say once i got married and was on my own, it all came back to me. i knew exactly what to do! to this day, I still try to duplicate some of the recipes she made and call/text her often for the ingredients.
does this meal look complicated!? fancy, yes, difficult, no way! here’s how easy it is:
1st: dice up all the veggies
2nd: make the meatballs, roll them, bake them up
3rd: make the coconut curry sauce while the meatballs bake
4th: combine everything🙌🏽
Chiso is our pickiest eater and he loved this plate. y’all know i’ve been using my Ninja Foodie as much if not more than my air fryer, and it can pressure cook white rice in 2 minutes ( + the time it takes for the pressure to build up). crazy, right!? but that quick turnaround time is everything on a weeknight when you need something yummy, wholesome, and on the table fast.
you can serve these meatballs over cauliflower rice for a low-carb option, and you can even add veggies to the sauce (spinach🍃 would be a great option). i chose basmati rice cooked in chicken stock + onion powder & garlic powder.

Coconut Curry Meatballs
Ingredients
- 2 lbs 93% lean ground turkey
- 2 garlic cloves, minced
- 2 green onion stalks, chopped
- 2 tbsp coconut aminos
- 1/2 tsp seasoned salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- sea salt & cracked black pepper to taste
- 2 tbsp coconut oil
- 1 red bell pepper, julienned
- 1 yellow onion, diced,
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp red curry paste
- 1/2 tbsp curry powder
- 1 - 13.5 oz can coconut cream (solids only)
- 1 cup chicken stock
- juice of half a lime
- green onion for garnish
Instructions
- Preheat oven to 400 degrees and coat a large baking pan with no stick cooking spray.
- In a bowl, combine all meatball ingredients and mix by hand until just combined. Roll tbsp sized meatballs by hand; i made about 38 meatballs.
- Place balls on baking sheet and bake for 19 minutes.
- as the meatballs bake, melt coconut oil in a large wok or skillet on medium high heat. Add onion and sauté for 4-5 minutes.
- Add garlic, ginger, and red pepper and cook for 2-3 minutes; add curry paste and curry powder and continue cooking for another 1 minute.
- Pour in the coconut milk and chicken stock, combine, and bring mixture to a boil. Reduce heat and let simmer for 8-10 min and watch for it to thicken slightly.
- Add the meatballs in and cook it all together for 5 minutes. drizzle in lime juice, garnish with chopped green onion, and serve hot over rice!
