WOW your family with this ALDI budget-friendly fancy dinner

When I tell you guys that I’ve struck gold when it comes to finding high quality food and more at unbeatable prices, you better believe me! Ever have to bounce around to a handful of stores to get all of your shopping done? Yeah, I don’t live that life anymore🙌🏽. I love that I can get the vast majority of my pantry staples at a solid, low price at ALDI. Let me prove it to you with this fancy, budget-friendly weeknight meal!
It’s no secret that salmon is my favorite thing to order while dining out, but I make it at home often too. I typically only buy it when it’s on sale, but the price per lb of ALDI-exclusive brand Fresh, Never Frozen Atlantic Salmon, IS the sale price when compared to other major grocers! I can still eat all my fancy dishes without paying the fancy price tag! I picked up this gorgeous, 2 lb fillet to make my Lemon Dill Salmon (keep scrolling for the recipe below). we eat about 4 oz per serving, so each portion totals out to $1.89.
I always offer a vegetable or two for each of our meals. If you’re not a fan of chopping veggies, pre-cut is always the way to go. If you’re not a fan of cooking those veggies lol, steam-able bags are your BFFs! 5 minutes or less in the microwave and you’ve got a healthy, hot side dish. We’ve got a family of 6, so the 12 oz bags are perfect size and price at just $1.75 each.
The kids and I love baby corn, so the Season’s Choice Steamable Frozen Asian Seasoned Medley is our jam at only $0.44 cents per serving! There are several affordable vegetable varieties to choose located at your local ALDI freezer section.
I also grabbed a 5lb bag of creamy, yellow potatoes to go with our meal. I could totally eat a fluffy baked potato with all the fixings every single day! They are such a childhood favorite of mine. At $0.28 cents per potato they are crazy inexpensive, filling, and each person can customize their toppings to their liking. We enjoyed them with plenty of shredded, lactose-free cheddar cheese, vegan butter, crispy bacon, chopped green onion, sea salt, pepper, and fresh chives.
If there’s one thing this family doesn’t do, it’s skip dessert😉. Kosi helped me mix up these rich, delicious brownies from the ALDI-exclusive’s liveGfree brand line- yet another affordable find with all of the flavor yet none of the gluten. Listen, gluten-free items can be very pricey! At $1.85 (16 servings per box), we were blown away at the taste and texture of these chocolate brownies!
Our grand total per person? $2.73 (prices vary by location). How? One word- ALDI!
Salmon: $1.89 per serving
Veggies: $0.44 cents per serving
Potatoes: $0.28 cents per serving
Brownies: $0.12 cents per serving

Perfectly Baked Garlic Dill Salmon
Ingredients
- 2 lb Fresh, Never Frozen Atlantic Salmon
- 1 tbsp Simply Nature Organic Extra Virgin Olive Oil
- 2 tbsp fresh dill, minced
- 2 garlic cloves, minced finely
- 1/2 tsp seasoned salt
- crack black garlic pepper to taste
- fresh lemon slices
Instructions
- preheat oven to 450 degrees.
- drizzle olive oil over fish and run evenly over fillet with your fingers.
- sprinkle garlic, dill, seasoned salt, and pepper over fillet evenly and top with fresh lemon slices.
- bake for 13-15 min. or until desired doneness*.
Notes:
I like my salmon like I like my steak- almost well done. if you love medium well or medium, keep an eye on the salmon and remove it 2-3 minutes earlier.
