well.  heeeey fit friends!  i took a teeny, tiny break and recharged my blogging batteries and to put max effort into something i’m ridiculously crazy excited about.  6 days from now a dream that dropped into my spirit back in 2012 will become a reality.  like, in real life!!!  God continues to blown my entire mind throughout this process.  i’m celebrating early with this here dairy-free, flour-free, low-sugar cake healthy vanilla banana bundt cake! 

 

like you ever need a reason to eat cake tho.

i can say with full confidence that we (mostly me lol) are transitioning into a completely dairy-free household and it has never been easier these days.  sooooo many options and alternatives out there now vs when i was growing up.  heck, even just a few short years ago.  that said, let’s talk about this super easy, non-dairy, 2 ingredient vanilla pb icing first 

i took some So Delicious Coco Whip (i suggest using the regular version and not the light…it’s way too airy and doesn’t set as well)

and mixed it with this Peanut Butter & Co Vanilla powdered pb I walked up on randomly and couldn’t leave the grocery store without. 

i combined a tub of the Coco Whip with about 2 heaping tbps of the powdered pb.


add more or less depending on your taste buds! i didn’t want the pb flavor to overpower the cake, so that amount was perfect. set it in the fridge and get crackin’ on the cake.

 

Vanilla Banana Bundt Cake

a dairy-free, flour-free, low-sugar healthy treat for my peanut butter & banana lovers!

 

Servings 12 | Prep Time 10 | Cook Time 30

Ingredients

Servings: 12

Instructions

  1. preheat oven to 325 degrees

  2. combine oats, soda, powder, cinnamon, & salt well. (if you are making your own oat flour, add everything to your blender and blend until combined). dump into a large mixing bowl.

  3. in a medium mixing bowl, combine agave nectar, coconut oil, bananas, creamer, vanilla, and eggs well.

  4. add the wet ingredients onto the top of the dry ingredients. fold gently yet quickly until just combined.

  5. pour mixture into your greased or non-stick coated bundt pan

  6. bake for approx 30 minutes or until an inserted toothpick comes out clean

Recipe Notes

let cool completely before inverting onto a flat plate.

i usually put my pan into the fridge to speed up the process if need be!  #cantwait

i was so ready, yall!!  had all my stuff out the night before like i usually do before a race.  Sonny found my Polar watch a few days ago (YAY) in a corner of our bedroom that Dego likes to play in. can't believe we didn't look over there sooner. it had been missing for like 2 months.

16 month update: *waving* hellooooo separation anxiety! actually i'm waving goodbye cause it seems to be on its way out these days. hopefully.  he knows when i leave a room, enter a room, come home, etc, etc, and let's whomever is watch him know mommy is in the building. temper tantrums are beginning to come on out, and teething is on/off which makes him extremely clingy. when i take something from his little hand he isn't supposed to have, he drops to the floor and screams his little face off for a few minutes! hmph. Chiso prepped me real good for that though, so i've been expecting it.  we have awesome days, and we have those tough, draining, restless days but hey, it's all apart of this motherhood deal!

 when i look over at him sleeping innocently in the most adorable pose in the universe....my heart immediately turns to complete mush. bananas. mashed potatoes. green peas. applesauce. mush. my spirit is renewed, my heart is softened, and my attitude is adjusted. thank God for His grace and new mercies every single day.

i had to cancel my postpartum clients, my preggo fitness class, and i couldn't even go do my own thing and run out side. rain, rain, RAIN. everywhere. sooo i did something i haven't done on saturday morning in years.  i got right back in the bed with my boys and we all slept till noon!  we were extra hoongry when we woke up though so i made pancakes.

i carmelized some bananas on my griddle and served them with Carey's sugar-free syrup, So Delicious #dairyfree Coco Whip, and some roasted, unsalted walnuts.


on halloween night, we headed over to my sis-in-laws to let the kids play, hang out, and eat a ton of pizza! i waited so last-minute to make a dish so i needed something crazy quick. this was the first easy, pinterest recipe i could find- 'dirt cake' w/ worms!  this recipe is older than dirt but it was fun and just what i needed.

i combined an Immaculate Baking Company Scratch Chocolate Cake + 1 can of pure pumpkin and baked it as normal.  cooking times vary so keep an eye on your cake(s)!  using the pumpkin instead of the oil and eggs cuts down on the fat & calories, and adds a ton of fiber and moisture.  also, you can totally use brownies instead! let it cool then crumble it all up. that part was so fun!

portion out some single serving cups and spoon a heaping serving of cake crumbles in the bottom.  use your creativity here! some people add chocolate pudding, cream cheese, cool whip, etc... i melted some semi-sweet chocolate and mixed it with lite cool whip.  i spooned some over the cake and added mini chocolate chips and a sour gummy worm.

i told Sonny to get up and get dressed, pack an overnight bag, and to make it snappy. a kid-free trip is what i had planned, but after my sitters and backup sitters fell through we ended up bringing the boys!

1st thing on my agenda-- FOOD.  we headed to lunch and i totally did my research on this place beforehand. Sonny wanted to stay as close to his meal plan as possible but enjoy his special day, and boy did we! Jerry Built takes pride in their all natural, organic, antibiotic-free, hormone-free, grass-fed chicken and beef, they don't use trans fat or hydrogenated oils, and the produce is organic and/or local.

they get brownie points from me for presenting the food just like it's displayed on the menu and online!  Sonny got the super tasty Saint Arnold burger on a baked, toasted, whole wheat bun, and swapped out the french fries for a caesar salad.

i ordered this beauty-- Jerry's Cobb.  the cashier asked me immediately, 'and would you like to add grilled chicken?' which is what i planned to do. i guess that is a popular menu combo there.  yall, the flavors in this thing were POPPIN'!

there was a giant, kid friendly chalk board towards the front of the room that Chiso wanted to leave his mark on. way cool!

 40 minutes later we arrived on Galveston Island, but not before stopping by Kroger to get baby Dego some baby Ambesol!  about halfway to G-town, he let out a cry both Sonny & i had never heard before.  he was in so much pain from teething and i am honestly glad the kids were with us at that point.

our view from the San Louis Resort!  i sent Sonny to the spa for his pedicure while the boys and i relaxed and did a Periscope vid.  i've been saving them via katch.me for the past few days so they aren't gone forever anymore. kinda glad the first few vids i did are though lol.

after he finished, we hit the beach.  but not before grabbing something to eat downstairs at Grotto.  i had plans for a nice dinner later that evening but no way we could have waited that long to eat.  hunger attitudes kill good vibes every time.

afterwards,  we changed and got ready for dinner.  we traveled about 12 minutes away from our hotel to Rudy & Paco. it was an excellent suggestion by my sister-in-law Kara!  birthday boy got steak and spinach, i got the salmon & sautéed sugar-snap peas, and from the 'off the menu' kids menu, Chiso requested a grilled cheese sammich and fries.

 the owner was extremely warm, welcoming, and stopped by to chat with us and to wish Sonny a happy birthday.

back to z hotel!  12 minutes away and everybody was asleep when i pulled up to the valet.  we're familiar with co-sleeping at home now and then, so 4 in 1 bed was nothing new. we got up the next morning, checked out, and headed to breakfast at IHOP.

and i stuck to IHOP's Simple & Fit selections which were all under 600 calories.  how can you make healthier choices while dining at IHOP? here are some of my tips:

  1. read the entire menu.  there are sometimes specialty diet sections (gluten-free, vegan, dairy-free, etc.) or sections with healthier/lighter options. All meals in IHOP's Simple & Fit section are 600 calories or less, and contain lower sodium options as well.
  2. peruse the kids menu. the portion sizes are sometimes perfect for adults. at IHOP, all the Just For Kids options are 600 calories or less. they are usually smaller versions of the adult plates, so you still get a bit of everything without going overboard. 
  3. switch your syrup. IHOP uses Carey's sugar-free syrup, but you have to ask for it!  most likely the syrups already out on your table are 110 calories (or higher) and 28g sugar per 1/4 cup. and who uses 1/4 cup of syrup on their pancakes!? also, nix the butter.
  4. use your swaps.  my meal actually came with potatoes but i swapped them for fruit.  you can also swap turkey bacon for pork bacon. fresh fruit is now the default side for the lunch and dinner meals instead of french fries.
  5. Stevia to the rescue. bring your own all natural, zero calorie Stevia to sweeten your coffee and tea with.  the artificial packets already on the table will never compare nor will they do your body any good: Splenda - yellow, Equal - blue, Sweet N' Low - pink.
  6. IHOP's nutritional stats are finally listed online and are updated frequently (they were one of the last restaurant chains to release this info), so take a peek ahead of time or while you're waiting to order your food. utilize your resources; the info is right there for you!
  7. chiiiiiiiill. don't stress or get apprehensive about dining out. chances are there is something on the menu for you! even if the menu is set, you can simply ask for your dish to be made your way.

best picks: 600 cals or less (breakfast, lunch, dinner)

  • Simple & Fit Spinach, Mushroom & Tomato Omelette w/ fresh fruit (330 cals, 12g fat, 690mg sodium)
  • Simple & Fit Veggie Omelette w/ fresh fruit (310 cals, 12g fat, 750mg sodium)

we threw a joint birthday pool party with friends of ours, Kristina and Allen; their daughter, Celén, was born on May 28th.  the location was at my gym, Lifetime City Centre! it was special to me because i had part of my 30th birthday celebration there, Chiso was finally able to come gymming with me when he turned 3 months old, and now he has celebrated his 3rd birthday there.
