breakfast in 3! w/ Modern Oats

fall is basically here and it's back to school time, parents!  we are all busy. we are all often scrambling to get ourselves and our kids together and out the door in the mornings. been there!  actually i'm there every day.  now that Chiso has started preschool (no tears from either of us, yay), i make sure he is focused and ready to learn before he leaves the house. how? some brefus! yes, breakfast.  it's incredibly important for everybody, so don't downplay it or sweep it under the rug.  statistics don't lie, peeps.  easy, to-go options in the form of healthy carbs are the way to go, not unhealthy, sugary, prepackaged, instant, frozen junk.  they need good, wholesome, nutrient dense foods that their bodies recognize so they can perform at their very best.  start this with your kiddos NOW!  they will only get busier and busier as each year passes; by the time they are teens and beyond breakfast will be second nature (and hopefully non-negotiable).  parents, we must send our babies off right and set them up for success.

if ya follow my blog or my Insta account then you'd already know how much Chiso (4 yrs) despises all vegetables.  however, he still loves oatmeal something serious!  so when this very special delivery hit our doorstep,  Chiso went BANANAS and could not wait to crack it open.

'yummy oatmeal, mommy!!!' yep, Modern Oats was officially in the building. look at all the pretty colors and tasty flavor combos!

there's an oatmeal cookie recipe on the back of the carton that i'm totally going to try!  anyway, if you don't/can't whip out a pot to boil water, then don't.

microwave a mug of water (enough to cover the top of the dry oats) until it's pretty darn hot (bout 2.5 min),

carefully pour it into the carton, put the top on,

and in 3 minutes you've got a nutritious, power-packed, start to your busy day.

i whipped up the apple walnut flavor for Dego.  there were chunks of apple, flax seeds, pumpkin seeds, raisins and walnuts in each bite.... delish.

aaaand i ate my brekky right along side them. so exciting. lol. if you haven't seen my IG posts, my wedding anniversary is coming up and my hubby hasn't told me exactly what we're doing, but that i should pack a bikini!!!!!  so, i wanted to tighten up a lil' bit these last few weeks and get serious with my nutrition.  sure i eat oat bran and egg whites every morning anyway, but i miss being able to snack in moderation (quest bars, arctic zero, wheat thins, goldfish crackers, fig bars, dark chocolate covered raisins, kettle corn) whenever i please!  maintenance mode (concerning my calorie intake / body fat percentage) is fun and where i belong right now, but i just want to bring my best package to the beach, hahaha.  master trainer and 1/3 of the 6 Pack USA team, Brian Egwuatu quickly drew up a customized meal and workout plan for me that has got me wondering if i ever want to compete in a bikini competition again LOL!  it's been 3 years or so of not having this many restrictions, but hey, the more change you desire, the more restrictions you must make.  it is what it is.  plus i'm working on an outrageous 2 week timeline so just know ya girl is over here STRUGGLIN' for the cause!  once we are done frolicking and celebrating i will happily return to maintenance beast mode. 

i HATE leg extensions!!!!!!!! that is all.

nectarines are on sale!!! so you know what that means.... Summer time is near.  i watch for that price drop every Spring and it's finally time.  they are my fave fruit but my love for them is conditional... i will only eat them when they are solid and crispy like apples.  after a certain point ( peach consistency ) i can't do it!

Sprouts Farmers Market had a gigantic fruit sale (as always) so i got a few different kinds and made this bomb salad topped with fresh mint for us to snack on for the next few days.

our television STAYS on the Sprout channel but i actually got to catch an ep of The Pioneer Woman this week.  she made this 10 min shrimp stir fry that looked so easy and so tasty i got up and went to make it immediately!  i used chicken instead of shrimp,

fresh zucchini, grape tomatoes, grilled corn, fresh cilantro, garlic, and my last lemon. i didn't even measure yall, but here are the steps for what i did:

  1. cut chicken breasts into bite sized chunks
  2. saute extra virgin olive oil with about 2 tbsp butter on med-high heat in a very large wok or cast iron skillet.
  3. add in minced garlic and stir til translucent.
  4. add chicken chunks and cook just until done (i added lemon pepper seasoning to them).
  5. remove proteins from skillet; add chopped zucchini and let cook for 2 minutes. push them to the corner of your wok.
  6. add corn and cook 1 minute. push to corner of wok.
  7. add grape tomatoes last; cook for 1 minute.
  8. add chicken, fresh herbs , and squeeze your lemon into wok with veggies; combine.
  9. shut off heat and let sit for about 10 minutes or so before serving.

saturday morning started out with bananas and Justin's almond butter. Chiso killed these things one by one and so did i! what a yummy combo. 

 i sprinkled some coconut flakes on a couple of them too.

we'll be having these more often.

it was leg day @ the gym-

i didn't even get to finish though which makes me so upset!!! i had to get to my hair appointment (time to chunk the deuce to this  weave)  and i was scolding myself for setting it so early in the day.  rushing through my gym time is the worst.  this is what i did get done though using moderate to heavy weight:

barbel squats 5 x 12

calve raises 5 x 12

machine  leg press 4 x 12

barbel dead lift 4 x 12

then i went into the empty workout room and did three full circuits of this holding 15 lb. dumbbells:

walking lunges forward/backwards (used length of room)

stationary reverse lunges (12 each leg)

stationary side lunges (12 each leg)

15 jumping squats (put the weights down 1st)

rest then repeat.

i ended it with 20 minutes of fat burning cardio on my second fav machine, the stairmaster. i have grown to love this thing.

700+ cals later, crotch-sweat status was achieved and we were outta there!

on our agenda for saturday was a trip to see the Rat.  { happy very 1st birthday, Levi!!!! } we hit up Chuck E. Cheese, aka, CEC, for a family birthday party.  i ate a quick meal in the car on the way of canned salmon (chicken of the sea), avocado chunks, and some asian stir fried veggies.  i think it's some rice cheese up under there somewhere too.  i sprinkled Mc Cormick's BBQ seasoning on it and it came out waaaaaaay too fast. whoops.

yeeeeah Chiso pretty much stayed cooped up under one of us for the most part.

he is not a fan of Chuck yet.   couple more trips and he'll be kicking CEC in the shins like the rest of the kids.   and yes, the weave was still present in my head at that point, lol.  i ended up having to push my appt. to the following day.  sooooo i rushed through my workout for nothin :roll:

but i'm glad i got somethin in cause WE enjoyed the 'peeza' and cupcakes.

 back on track this monday morning though, right. i hope you started your day with some GOOD stuff- i had a spinach and tomato egg white omelette, my oats made with vanilla almond milk, bananas, cinnamon, and vanilla creme stevia, and a cup of green tea.

more healthy recipes and are en route-   pumpkin chili, cauliflower crust pizza, salmon cakes, and pumpkin brownies.  it's also time for an updated oatmeal post as i make it a liiiittle different now, huh.
