HEB meal deals + banana french toast

it's cooooooold.  Houston finally got with it and the temps have dropped.  enjoy it while it lasts.  this morning though... i did NOT wanna get up.  you hear me?   4:15am came way too quick and my bed was way too comfy.  i admire my members for just showing up to class like they always do.  THAT is true commitment and dedication if i ever saw it. cause ummmm, if i didn't have to be there today.... yeah :shock:  watching them file into the studio one by one, collect their equipment, and wait in anticipation as the clock winded down to begin class gave me the energy and inspiration i needed to give them nothing short of my absolute best!!  and that cup of coffee /green tea combo didn't hurt either.   let nothing stop you from remaining consistent and making progress. nothing. especially something as petty as the weather!

and headed home to take more pics and make breakfast!  saturday i saw all this french toast on IG and it inspired me to make some of my own.  i had some again this morning with my egg white omelette and they hit the spot.  carbolicious. 20121208_101553

i used sesame ezekiel sprouted grain bread and made a sliced banana sandwich first, 20121208_101514

then, i dipped the entire thing in a mixture of:

stuffed banana french toast

the stuff:

  • 1 cup unsweetened vanilla almond milk
  • 1 tsp pure vanilla
  • 3-5 drops of vanilla creme stevia
  • 1 tbsp coconut crystals
  • 2 tsp cinnamon
  • 2 egg whites

do this:

  1. combine all ingredients into a bowl big enough for your sandwich to fit in.
  2. mix them well, then dip your sandwich in on one side for 2 seconds, then flip it to the other side for 2 seconds.
  3. immediately transfer it to a medium heated no stick pan and 'fry' it until brown on one side.
  4. flip it and brown the other side!  plate it up however you'd like and top it with more cinnamon, walden farms pancake syrup, and fresh banana slices.  i even shot it with some 'i can't believe it's not butter' spray a few times.
  5. NOM.

@  HEB this past weekend, i took advantage of one of their popular meal deal specials.  i got the two-step gumbo and the BBQ shrimp mix for free.  yep, i had some help.

 it's not considered clean, but it's all natural, decent nutritional stats, and quite good!

stats (per 1/2 cup): 60 cals, 1.5g fat, 470 mg sodium, 9g carbs, 2g fiber, 3g sugar, 2g protein

to the gumbo mix, i added 1 cup of water, another cup of low sodium chicken broth, a bag of frozen okra, cut up two roma tomatoes, some fresh cilantro,

and even though it didn't really need it, extra seasonings!  just a few dashes of my sweet smokey chipotle paprika, black pepper, sriracha, and 2 squirts of liquid aminos.  it all came to a rolling boil, then i let it simmer for about 20 min on low so it could thicken up.

i THOUGHT i had some shrimp leftover from last week's kale tacos, but nope...all gone.   wish i had realized that before i went to the store!!  i ended up using some of the bbq tilapia that you're gonna read about in a sec.   so if you have some, you can totally add shellfish, crab, sausage, etc. because gumbo just ain't gumbo without it ;)

i added a scoop of brown rice on top and Sonny mixed it all together before he gobbled it up.

when you buy the gumbo mix, you get this free.  i got to sample this stuff on some steel head trout while in the store which is what sold me on it!  i believe the cooking demo lady used olive oil to thin it out though:(  but it was soooo good. when i got home, i took 2 tablespoons of the shrimp mix and added 1 cup of unsweetened vanilla almond milk to make a creamy marinade for my tilapia.

stats: (per tbsp) 25 cals, 1g fat, 1g sat fat, 340 mg sodium, 3 carbs, 2 sugars

oh yeah, while i was @ the store, i came across these guys.  can you read that sign?  it says purple sweet potatoes are higher in nutritional value than the traditional sweet potato.  who knew? i didn't.  a friend of mine advised that i check out an Asian market  for these babies though cause that 2.98 a lb is a little too steep for me.  can't wait to try them!

now for my last unexpected purchase!  i've been drinking almond milk for like the past 3 years now and i have no plans to go back to dairy milk anytime soon, or ever.  but when i tell you i almost slurped down this whole box, you better believe it.

 Chiso hasn't been a fan of drinking milk solo, so i've just been using it to make his oatmeal instead of water so he can still get his vitamin D and calcium.  after i let him sample a little of this Horizon Organic Vanilla milk @ the store, to my surprise, he asked for more immediately!  actually i'm not surprised cause it's a little high in sugar (22g) and it's vanilla flavored. lol.  however, it's all natural, and still loaded with nutrients, so it went in the basket.

my lovely homie & co-worker, Monica, makes THE best vegan pumpkin pie i have ever tasted and i'll love her forever for sharing the recipe!  you should make it for Christmas- i know i am.  thank you, Monicaaaaa

Monica's Vegan Pumpkin Pie

the stuff:

  • 10 oz silken tofu
  • 1 can pure pumpkin
  • 3/4 cup maple sugar*
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1 tsp vanilla

do this:

MIX! then pour into your pie pan and cook for 45-50 min on 350 deg. keep an eye on it as cooking times and temps vary per oven. you can even go crustless with this- it's up to you.  and no, nobody will EVER know there's tofu in there long as you zip your lips :shock:

for 1/8 slice:

gotta love those stats!  i added a layer of cool whip and crumbled a few sheets of graham cracker on top after the pie was done. did NOT miss the crust one bit.  i'll take pics when i make it again for Christmas.

*tip per Monica: you can switch our your sweeteners and do granulated stevia, honey, agave nectar, etc...you choose your favorite one.  just convert your amounts and adjust your nutritional stats accordingly.

they seated us by this big bay window and even though it was night time, the view of the lake behind us was excellent.  just across the water was the hospital where Chiso was born.  we just can't escape him. LOL.

as if we hadn't already eaten like 3 baskets of chips and salsa, Sonny ordered nachos for our appetizer :roll:

nachos mayas: crisp corn tortillas topped with refried black beans, creamy lump crabmeat, mozzarella, jalapeños, served with guacamole, sour cream and pico de gallo. mucho points for presentation!  yummy? YES.

Sonny got the lamb chops:  grilled marinated lamb rib chops with queso oaxaca topped with tomato and chili guajillo sauce served with nopales, onions and grilled corn.

and i got the mahi mahi.  when the waitress came over to check on us, she gave my plate a puzzled look and said 'wow, it looks so different without the sauce!'  i'm guessing it's normally submerged in it *shrugs*.  anyway, the sauce tasted like lime garlic butter and was fantastic.  however, i want to be in control of how much goes on my plate, please and thank you!  per the menu: grilled mahi filet marinated in garlic and butter on a bed of grilled vegetables and sautéed spinach, served with a pineapple papaya avocado pico-de-gallo with wine butter sauce drizzled on top.

i went out this past weekend!!! ok not out out, but it was to a private dinner celebrating my dear friend turning 30.  it was held at Perry's Steakhouse - one of my faaaaaaave places for a magnificent dining experience!  always great service, and the food...well, look:

i kept it clean and enjoyed the grilled salmon (sauce on the side) and kept the sautéed spinach that accompanied it.  i reeeeeally wanted to sub it for the butternut squash puree, but our waitress quoted me some ungodly price for that small change and i declined.  anyway, i made sure i altered my macros to fit this meal in- it was delectable.  i'm glad i got my sauce on the side cause i put a little on my fork and it tasted like straight flavored butter!!

i'd love to have my competition abs/core back!  i took this pic immediately after my class- 1 hour of  HIIT and some core work at the end.

Q: what's the best type of cardio? HIIT or steady state?

A: BOTH.  incorporate both types into your weekly routine.  i do HIIT once or twice a week, and steady state either early in the morning, or after my weights session.  switching up the days you do either one will keep your body from plateauing and constantly  burning fat.

it tastes just like the traditional canned, jellied, cranberry sauce, but fresher and more tart. i'm cool with it! 20 cals, 4g sugar, 5 carbs for 1 tbsp. i do believe it has the lowest calorie and sugar count of all the butters.  i missed it on Thanksgiving, but i will definitely be eating some with my Christmas dressing this year!

clean, all natural, guilt-free chocolate sauce

i'm going dip and drizzle crazy.  i've googled homemade chocolate sauces in the past and normally they contain some type of oil (usually coconut which is 120 calories 13g fat, 12 saturated), a wack sugar substitute that tastes like chemicals, or just an ingredient i don't particularly care for.  i took a complete gamble with the ingredients and the measurements and it turned out, well, darn good. so i tried it on what else, some dessert first!

i made a guilt-free arctic zero sundae with soy whip and crushed pistachios.

trial and error is a huge, frustrating part of coming up with your own recipes.  it can get expensive too!!  so getting it right the first time (or at least the first few times) makes me feel good. really good.

would you like to read about my fantastic workout from this morning before i share the recipe? ok great!!! there is something about the peacefulness of the gym super early in the morning.  i get it now.  i can clear my mind, focus on my to-do list not only for that day but my long-term goals, projects, dreams, next moves, pray...talk to God...and get my life together.

  it's that crucial.  minimal interruptions, effective workout, no waiting on the equipment...  it's never the same in the evenings immediately after work.  even late at night; it doesn't compare.

symmetry is good.  symmetry is preferred. lol.  my right shoulder area is still more defined than my left, but i'm in the process of fixing it. one way to correct that is to do isolations (one limb at a time).  i used to pass this machine up, but never again!  i added it to my routine this morning and felt different parts of my glutes and hamstrings being worked way more vs. pressing both legs at once.  do NOT let the machines intimidate you- you can't progress if you don't try different things.  find a trainer and ask them for a demo if you can't decipher the directions.

i rushed home to my breakfast and my boys!  made some egg whites and topped them with fat-free feta and parsley.  i kept my banana oat pancakes simple and sprayed them with 'i can't believe it's not butter' and walden farms pancake syrup. aaand reduced sugar Heinz for my eggs.

 for my oatmeal though, i topped it with more fresh bananas, crushed almonds, and a drizzle of my clean chocolate sauce!  mmmm crepes would also be a grand idea.

  by the way, my oatmeal is cooked in unsweetened vanilla almond milk/water, and a splash of vanilla.  then i add cinnamon and stir.

ready now?

3 ingredients:

clean, guilt-free, all natural, chocolate sauce

the stuff:

  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp all natural, raw, coconut crystals (found at Whole Foods)
  • 1 tbsp unsweetened vanilla almond milk

do this:

i suggest you heat the milk first ( you can nuke it for 15-20 seconds) THEN add the cocoa powder and crystals.  the cocoa won't absorb into the milk if it's cold and you will be stirring forever cause it  just won't mix. just like oil and water. you can either add more or less almond milk- the consistency is up to you.  i found that after mixing these exact amounts together (get all the lumps out) and letting it sit in the fridge for less than 30 min, it was the perfect consistency for dipping, pouring, or spooning it straight :lol:

the sky is the limit!   double, triple, or quadruple the recipe as needed, just adjust your stats accordingly.

raw unsweetened coconut flakes, crushed almonds, crushed pistachios.
