what itch? 7 year anni wkend

aaaahhh!! so many pictures! well thank God for pic collage apps or this blog post would be 2 miles worth of scrolling.  we had a low-key, relaxing time in Lakeway (right outside of Austin) at the Lakeway Resort & Spa this past weekend for our 7th wedding anni. time for a new mattress.

this sweaty selfie was taken after my last workout before our anni weekend began.  i had only managed to unbraid half of the what seemed like 1 million braids in my head at that point, so i threw on a head scarf and got some upper body and cardio done regardless.

CYMERA_20140912_194709

not gonna lie, i worked out with the anticipation of some good food in my near future! intensity is everything and i turned it UP. here's my stair slaver workout: (video coming soon)

Screen Shot 2014-09-19 at 10.15.55 AM

after i posted this pic of my go-to traveling snacks on Instagram i remembered it would tip Sonny off about our trip, whoops.  it's my year to plan and i hadn't told him a thing about leaving to go anywhere. oh wells.

IMG_20140911_194404

i hardly ever leave for trips without:

  • fresh fruit (nectarines this time)
  • bottled water
  • turkey jerky (high protein snack)
  • Quest Bars ( i like Double Chocolate Chunk and Sonny likes Cookies & Cream the best)
  • gum to combat mindless munching! that gets me in so much trouble
  • roasted, unsalted nuts
  • granulated stevia (for my coffee, tea, and oatmeal when eating at restaurants still operating in the stone age)
  • Beats headphones + Spotify
  • fitness or foodie mags

CYMERA_20140916_150441

off we went!  breakfast, snacks, and breast pump in tow.  i actually sat in the passenger seat first but soon as my butt hit that seat Sonny reminded me that it was my year to host.  yeah, yeah.  i actually had another stop planned along the way, but the weather ruined it! i did NOT even check nor consider the weather when i was planning everything, seriously. i just knew it would be clear, hot, and sunny as usual. no. so i'll save that stop for a later date.

CYMERA_20140918_124514

we're here!  however, our room wasn't ready since we arrived earlier than expected.  we were hungry again though so we hit up the resort's breakfast buffet per the front desk attendant's suggestion.  boy was he right!  everything, and i mean everything was as delicious as it looked. so.many.options.  we love a good omelette bar and both got egg white omelets loaded with veggies.  no surprise there.  Sonny is prepping for a few upcoming shows and did his best to stick to his meal plan.

CYMERA_20140918_124941

bacon, sausage, pancakes, french toast, migas, fruit... sensory OVERLOAD.

CYMERA_20140918_131531

next, a couples massage i have been anticipating since i booked the appointment. we were already full and lethargic from breakfast and the massage was the icing on the cake for Sonny. at one point he was over there drooling.

20140913_122650_1

the view overlooking the pool from the spa. the gym was right across from the spa and you knoooow we checked that out next.

CYMERA_20140918_131012

impressive! you can get an excellent full body workout done in there, oh yeah. hotel gyms are high on our amenity list and this one gets 5 stars from us. they had my beloved arc trainer, treadmills, a full rack of dumbbells, and a bunch of machines including a Smith machine. lovely.

CYMERA_20140918_130642

our room was ready by this time so we headed to check it out and take the most incredible, uninterrupted nap, EVER.  boooo to the weather though.

20140914_104246_1

it didn't start clearing up until the day we left, but we will certainly be back with the kiddos so they can have the time of their lives out there on that slide!

20140913_171212_1

next up, an early dinner before the big Mayweather fight.  so this was my first time seeing my hair straightened (my beautician wrapped it at my appointment friday and i kept it that way) and i was blown away.

CYMERA_20140916_220724

may not seem like much to anybody else but man my hair has come a long way as far as length and texture! i decided not to get another perm but i knew that as soon as the tiniest drop of moisture hit my head, it would never be the same!  after wearing my braids for a year (shout out to my gorgeous, mobile (yes, she will come to you), braid lady, Ogechi) with 3 short breaks in between, they really are the best fit for my sweaty, on the move lifestyle. they'll be back very soon, but i enjoyed being girly and flipping my hair around town all weekend, lol.

one of my regular Lifetime class members, Sally,  lives in Austin and really hooked me up with the scoop on where to go in ATX.  she suggested we stay downtown close to 6th street with the youngins' but after i told her how Sonny just wants to actually relax on his vacations she said to stick with the hill country, (i.e., Lakeway).  we hit up Oasis and saw a little bit of the sunset.  through the fog.

CYMERA_20140918_125938

after perusing the menu for forever i finally decided on salmon with sweet potato cakes, grilled veggies w/ a side salad, and Sonny went with a grilled shrimp salad. i ate most of those chips. 20140913_192822_1

then, we stopped by the landmark Whole Foods Market in downtown Austin for snacks and gelato! so many nostalgic memories here for me. you can read about one of them in the IG post i made that day <3

CYMERA_20140913_222942

gosh i love this store.

20140913_193228_1

especially this aisle.

CYMERA_20140918_124150

unpictured are the plantain chips and chocolate covered raisins i killed before the fight even started.

CYMERA_20140918_125618

was it just me or was the Mayweather fight...boring?? anyway, the next morning we were both up super early as usual and headed to the gym before breakfast. who forgot their workout shoes? :'(  so unlike me!  i went anyway but i don't advise working out in flip-flops around weights, guys. in addition to the shoe fiasco, i had one of THE dumbest workouts ever.  complete waste of time. i was so worried about my hair puffing up i didn't want to move. and i love to move. i think i did the arc trainer for like 8 minutes super slow, then some dumbbell curls, lunges, and squats holding the dumbbells. didn't sweat a drop. ridiculous. i love my hair like this so much but unless i flat-iron it every single morning (and i definitely won't) then i just can't rock the straight look with my lifestyle. THE struggle.

CYMERA_20140918_125341

we got cleaned up, explored the resort a little more, then headed to hit up the omelette bar again.

20140914_103932_1_3 7 years in the marriage game! hard to believe i've known this dude for almost 14 years. we had plans to go out on the lake that fell through, so we hit the Lakeway Galleria Outlet Mall to look around and get some lunch and fro-yo.

CYMERA_20140916_151110

found a new fave flavor i've never had before-- taro. yum! i discovered it at Red Mango back in houston too.

20140914_144234_1

pistachio & taro fro-yo randomness.  worth every bit of dairy bloat.

PhotoGrid_1410722858187

while walking through the galleria, i did a double-take after seeing the word Chiso!  close enough. what a rare sighting.  from there we went back to the room to pack up because #Texans. yeah, they were apart of last years Miami trip too.  so was the Mayweather fight now that i think about it!

20140914_130814_1

i requested a fridge to our room to freeze and store the milk i was pumping.  gotta get it out, and gotta get it done.  we headed to watch the Texans game at Sally's beautiful home in the hill country before heading home to our boys.

our actual anni this year is on monday, september 15th, and instead of going out to dinner, we went to the gym and sipped on anniversary protein shakes.

20140915_205400_1

wouldn't have had it any other way.

20140915_210827_1

happy 7th anni, Mr. Egwuatu!

thanks for reading:)

dark chocolate pumpkin spice fudge brownies

crazy good 5:30 am workout this fine tuesday morning!  got through 1 hour of Total Conditioning,  a Lifetime Athletic signature formatted class.  almost 700 cals burned!  i set aside some time every monday to sit down and write out exercises for my class.  i have always sucked at making up stuff on the spot- that never goes great for me.  like i could never be given a mic and asked to 'say a few words' at an event... omg.  i'd totally pee on myself.  however if  i'm to speak about health, fitness, or FOOD, i'd be straight!!

i'm no longer unbeweavable.  i know sew-ins are supposed to last way longer than one month lol, but that's all i could take.  i definitely sweat out my perm this morning and i'll be smelling it for the next few days.   aaaaand so will anybody on the elliptical to the left and right of me

after  my class, i did a quick upper body circuit cause i didn't get to finish my workout from last night. i did:

bench press 4 x 10

machine curls 4 x 12

machine tricep extensions 4 x 12

machine pull ups 4 x 10

pushups 4 x 10

cable flyes 3  x 12

with moderate - heavy weight.   didn't do abs cause i do them at the end of my class.

breakfast was my banana-cinnamon oats and spinach egg white omelette as usual. dinner last night though.....

i was imagining making and eating this while on the elliptical, not even kidding.  could not get home fast enough.

grilled chicken BBQ pizza.

i used mc. cormick BBQ seasoned grilled chicken, Trader Joe's organic pizza sauce, roma tomatoes, shredded rice cheese, and fresh cilantro on an oatmeal/egg white pizza crust.  i made two out of one serving and killed them both immediately.

are you stocked up on canned pumpkin through the winter? lol.  i have way too many cans of it in my pantry right now.  i bought so many at once though cause there was a shortage last year.  i use canned pumpkin all year round though, and pumpkin pie is my fave next to key lime.   pure pumpkin is low-fat, low sugar, low carb, and has plenty of fiber.  great for sweet and savory dishes, just like sweet potatoes.

i cannot wait until Chiso can participate more with me in the kitchen!  i have so many fun cooking projects planned.  for now, he's my studio audience and listens to all my cooking demos.  yeah right, he only sticks around if i give him snacks.

my little hamburglar munching on strawberry magic pop, his fave. this week.

Sonny requested brownies, so i made some with canned pumpkin. who the heck knows who created this recipe first, but i got it from Hungry Girl a couple years back.  it's just 1 can pure pumpkin mixed with 1 box of  brownie mix.  no oil, eggs, or butter.  i added a few thangs though.

dark chocolate pumpkin spice fudge brownies

the stuff:

  • 1 box fudge brownies (your fave brand)
  • 1 can Libby's pure pumpkin
  • 1/2 tsp pumpkin spice
  • 1 tsp vanilla
  • 1/4 cup dark chocolate chips (optional)

i cut 15 servings outta my loaves.

do this:

set oven to 350 and mix everything together in a big bowl until smooth.  no lumps or dry spots.  cooking times vary..but since the batter is thicker than normal, take it out after baking it for the required time according to the kind of pan you use and do the toothpick test.

hey, the stats are still waaaay lower than the normal box recipe.

made two loaves instead of using a rectangle or square pan- one with chocolate chips, and one without. which was stupid cause all our visitors ate the one with chips.

and that's why!  i microwaved a piece for a few seconds until the chocolate melted a little, then topped it with some vegan whipped topping (found at HEB in the vegan/produce department).

YUM-MAY.

what are you gonna be for Halloween this year?

2012 Space City Muslcemania Championships Show / 5th wedding anniversary

*****September 15th, 2012*****

GLORY TO GOD for allowing us to participate in this journey from start to finish.

my first bodybuilding competition has come and gone! what a weekend/week to remember.  i've been trying to collect as many pics as possible from my friends, family, and even some of the professional photos but i am so backed up with pictures and posts i need to just POST something already!!!

THANK YOU to my posing coach, Christine Anderson of CAC and Food 4 Thought.  She is an amazing woman, exceptional teacher, and most important, a true pleasure to work with.   she is always on time, pleasant, positive, full of energy, and so very passionate about sharing her knowledge and expertise with her clients.  i highly recommend working with Christine whether it's your first or 50th show.  she is as professional as they come!  i definitely learned from the best.

Christine and i together at the dress rehearsal 1 week before i hit the stage.

i can't speak for the other girls, but i was waaaay more nervous for dress rehearsal than the actual show!   i enjoyed meeting and making friends with the other competitors along the way.  i loved hearing about their 'story' and why they chose to compete.  that's definitely what i get asked the most too.  as crazy as this sounds, it didn't dawn on me that these girls were my competition until that day lol!  we all worked so hard for the changes we made to our bodies- it was an awesome thing to not only watch my own body transform, but to witness their progress too.

that following friday evening, Sonny and i attended the mandatory check-in meeting for all the competitors.  the administrators gave us the run down on how things would go on show day and other important info we needed to know.

we also got our spray tans done that night as well as our numbers, 21 and 23.  we had to wear dark, loose fitted clothing so that we wouldn't mess up the tan job. it looks like our clothes are swallowing us.

i also met up with and chatted with some of the funniest and coolest girls i've ever met, seriously.  i expected show day to be SUPER long, but hanging out and laughing with these girls backstage all day made it fly by!  the entire experience was that much more enjoyable because of them.

Sonny passing his drug test with flying colors. too bad they don't check for traces of popeyes chicken grease

show day!

i know, i know. looks disgusting but it's my big bowl of banana oats with cinnamon, pumpkin pie spice, and vanilla creme stevia.  i ate it on the way to get my makeup done and hair curled.

it's a miracle!  after 3 months of looking straight rough, i appreciated this makeover very, very much.  THANK YOU to Tinnell Sloan  for working every single ounce of her magic on me that day. i needed it.

ducklips = feelin myself.

headed to the venue, bright and early.

 but still late

we all got dressed and ready for the big group photo outside the venue...Sonny missed it by mere minutes!!

however he made it for the guys only pic. this picture SCREAMS hard work, doesn't it!?  among other things, LOL

after that, we took individual portraits outside as well.

Sonny and his washboard abs waiting his turn for his solo shot.

Dani and i waiting to take our individuals! i met this fabulous woman at our first posing camp about 2 months prior.  we exchanged numbers and kept in touch and checked on each other throughout those crazy weeks of training.

after pics, we head back to the dressing rooms to change into our theme wear.  the order of events was posted right outside the door - Sonny started the show and i ended it, literally.  and this was only the morning show order of events, not the whole day like i thought!

in the dressing room joking, taking pics, primping, eating, and just waiting.

i was an Olympic sprinter and Dani was a pin-up girl. my baton was around there somewhere!

i went out to take a quick peek and was able to catch Sonny heading out to start the show!  this was his club wear. super sharp;)

when they finally called our class to come line up my heart skipped several beats.

as i watched the girl in front of me take a deep breath and walk out on stage into the lights, i said to myself in my head, 'this is it, Leah, DO IT.'

the stage guy interrupted my thoughts and said 'alright, go, go, go'.  i said a prayer and just went.

aaaaaaaaaand 1 minute later, it was over!!!

here are a few shots of my Nigerian soccer player doing his thing for the theme wear round.

way to sell it, Mr. E!

my gorgeous buddy Kaleigh (1st time competitor) and i after finishing up the theme wear -tall round. we did it, girl!!  we survived on Walden Farms products (sugar-free, fat-free, carb-free, gluten-free, EVERTHANG-free) to spice up our meal plans lol.

**intermission break **

we were able to come out and visit with the friends and family that came to support us!  we are so grateful for all the cheers, encouraging words, pictures, videos, well wishes, presence, and love.  THANK YOU sincerely, family and friends!!!

being cheesy for a pic in my runner stance.  my cheeks were so sore by that point.

my bro, Chiso, and i!  during the break, i went home to spend more time with my little guy as i missed his butt so bad and we hadn't even left for Jamaica yet.

@ home taking more pictures.

halfway done-  we then headed back to the venue for the evening show and swimwear/bikini rounds.

and we're back!  all changed and ready to go....to wait some more.

the nerves were all gone at this point- i was just ready to get it over with more than anything.

no vid for this round, but i do think it went WAY better than my theme wear round. i was comfortable and nerve-free by then.

there's my front pose for the judges,

the back,

and the front again!  how'd i do?

2nd place - bikini tall class!!

this was certainly an added blessing.  my ultimate goal was to just get through this darn training journey and hit the stage for the first time and do my best.  i am so grateful and humbled.

that leads me to my next THANK YOU which goes to my extremely patient trainer, Travis!!!!  thank you for answering my bajillion questions, texts, emails, calls, and emails  .  even when i was dog tired on the way to our sessions, i would always be pumped and re-energized after our workouts.  physically and mentally.  he encouraged and reassured me along the way and promised to have my body ready for this show.  he did just that!  i share this win with him in my heart as he contributed to making my first competition a very special one to remember.  he has plenty of clients but gave me his undivided attention and made my goals, his goals.  he's an awesome, highly recommended trainer to work with!  good luck on YOUR upcoming show, Travis!

Sonny also brought home some hardware too- that's my hubby!!! 2nd from the right in the striped bottoms. i am so proud of him.

ok back in the dressing room, i HAD to snap this of Dani savoring a snickers bar immediately after we were totally done.  she is going to kill me but her face is PRICELESS. but those abs though!!!

 'why wait?'

DON'T.

hahahahahaahaha

few more pics with the ladies before we parted ways for the evening. two bikini girls, two figure girls.

then i went to find Sonny so we could rep for anniversary #5! all natural, baby!

this girl here... my angel.  THANK YOU, Ogechi, for inspiring me to even start blogging in the first place.  you have been with me from the jump!  you have prayed with me, over me, and for me and i'm so grateful to God for blessing me with your friendship.  i was under the impression that Ogechi was all the way in Atlanta that day, but she surprised the heck outta me and was sitting in the audience for the evening show the entire time!!! her support means the WORLD to me and i love her (and her recipes i will be posting more of! ) so, so much. i appreciate you my dear sister and friend.

what an awesome 1st experience, period.  so grateful to have done this with Sonny by my side and also celebrate 5 years of marriage and counting.

thank you for reading!

competition eve

i'm getting used to not doing morning cardio already lol!!! my last cardio workout was wednesday, so thursday i went and got a pedi for the first time since this past April.

i have always been uncomfortable with falling asleep in public places, especially when i'm travelling alone. i don't see how people do it. i just feel so vulnerable and i'm sure people have been taken advantage of in those types of situations.  however, when i tell you that this is the first time i have ever dozed off during a pedicure and plain did not care, you better believe it.  i got the works- massage, wax wrap thing, salt scrub, yeah all that. it felt that darn good and was well worth the wait.

golden toes! they will match my show suit perfectly, you'll see!  i would have gone for the french tip (or whatever it's called) but ummmmmm, i can't get that done on my toes for the very same reason i didn't include my left foot in the shot. HAHAHAHA

this morning's breakfast: 1 egg + 2 whites, banana pancakes, and a bowl of oatmeal that isn't pictured.

this is prolly THE saddest breakfast shot i'll ever take but i don't regret posting it.  every meal isn't a pretty presentation although most times that is what i strive for, even if i don't take a pic.  i remember trying to WOW Sonny when we first got married with my food creations and presentations.  i really do enjoy them. it's all apart of my cooking/kitchen experience lol. ok ANYWAY,   i burned my omelette at that.  i cut it up, added some fresh cilantro and dijon mustard and enjoyed every bite.  i used to put one egg white into my pancakes, but one morning i tried leaving the eggs out entirely to see if it would still cook and hold together ok.  and it did.  i added water to the mix instead.  i just wanted a bigger omelette, that's all.  that way, it seems like im eating more food.  get it? and besides,  after putting 'i can't believe it's not butter'  and Walden Farms pancake syrup over them, the consistency doesn't even matter anymore.   still the yummiest, cleanest pancakes ever!  but if you'd like them to look prettier, add the egg.

i really thought it would be hard for me to just sit down and do absolutely nothing today, but that feeling passed rather swiftly

i also woke up with something extra-

lots of HAIR!!! and a headache as my scalp is super sore:(.  i normally don't get my hair done, done unless there's a huge event happening. aaaand well, this one calls for it.  i'm ready to whip it all across the stage tomorrow!

i picked up a slab of salmon yesterday in prep for Sonny's last meals before our show.

i used some Walden Farms (calorie-free, sugar-free, gluten-free, cholesterol-free, etc) pancake syrup, Mc Cormick smokehouse maple seasoning, garlic powder, onion powder, and dried parsley.

12 min in a 450 deg oven. cooking salmon could not be any easier.

or any tastier.

i paired it with lime brown rice and steamed asparagus just before Sonny drowned everything in sriracha (hot sauce). sweet, salty, and spicy.

only thing left to do for the show is tan. that will be done tonight and again tomorrow (touch ups). oh and my makeup as well- bright and early!

tropical tilapia

coconuttilapiadinner.jpg

have i told you how much i love coconut oil? i've used it to pop popcorn, in desserts, pancakes, pan frying plantains... and most recently, tilapia.  coconut oil is good for us on the outside and inside!  in addition to hair and skin care benefits, weight loss, digestion, and immunity, it tastes AWESOME. the flavor does amazing things to your dishes- both sweet and savory.

i blinked at the 7 dollar price tag (@ Whole Foods) but it's worth it for sure.

on tonight's dinner menu:

not just any ol' tilapia... coconut-coated tilapia 'pan fried' in coconut oil. YUM. i put 'pan-fried' in quotes cause i definitely don't submerge the fish in oil; i only use about 1/2 a TEASPOON. really, that's it.  long as the bottom of your pan is coated, that's totally enough.

my raw coconut flakes from the bulk bins of HEB <3i coated both sides of the fillet, sprinkled it with a little tony c's, and threw it in  a low-med heated pan.

7 min on each side.

whala. i paired it with some steamed cauliflower (always have a side of veggies with EVERY meal!) and some kidney beans.  the fish is nice and lean, and the coconut oil/flakes balances out the meal with some good, healthy fat. Sonny doesn't even like coconut like that but ate it UP. *whew*

recipe update!

tropical tilapia

the stuff:

  • 2 oz tilapia fillet
  • 2 tbs coconut flakes
  • 2 tsp coconut oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp dried parsely
  • 1/2 tsp Bragg's Liquid Aminos (optional)

do this:

**did you notice there's no egg/egg white up there?  i didn't need or use a binder this time.  the coating sticks firmly to the wet fish, and it stays in place while cooking.  i mean if you just want the added protein though, go for it!  also, if ya need more, just double, triple, or quadruple the recipe of course.**

1. combine all dry ingredients (coconut flakes, garlic powder, onion powder, parsley, paprika) in a shallow pan big enough for your fillet to lay flat in.

2. add coconut oil to your medium heated no-stick pan.

3. coat the fish in your liquid aminos- use your hands!  (remember, a little goes a long way- you don't need much at all..it's more for flavoring and 'salting' the fish)

4. dip one side of the fish in your dry coating, then flip.

5. drop it in your pan and fry it up! fish cooks super quick..keep your eye on it. 5-7 min on each side, tops.

6. stuff your face.

per 2 oz fillet:

tropical tilapia

smile and go to bed knowing that when you wake up tomorrow it will be FRIDAAAAAAAY!!!! nite!
