i'll just keep it classy and congratulate the Pats.  moving on......

being at home to raise my boys has been one of the biggest blessings in my entire life. i am so thankful.  the only time i really hear crying from Dego is when he's uncomfortable (needs to be changed, hungry, the usual). other than that, he's showing that gummy smile off and cackling at Chiso! i thought Chiso smiled a lot but Dego takes the cake in that department.  Chiso is now a threenager. even on our most difficult, trying, exhausting days, the Lord reminds me how hard i prayed and cried for these boys.  that thought alone makes whatever i'm upset or irritated about (toddler temper tantrum, spilled food, disobedience, etc.) just not that big a deal anymore.  i actually dropped a big bowl of pancake batter and it splattered EVERYWHERE recently. everywhere. the ceiling, walls waaaaay across the room, under tables... just a gigantic mess. albeit my fault, instead of getting angry i stared at the chaos on my floor and laughed (not a crazed, hysterical, witch-like laugh or anything lol) then Chiso chimed right in with me.  i cleaned it all up with a smile.

 so before the big game started i went outside to get a 1 hour walk/jog/run thing on!  that's all i had planned to do, but i saw new fit mom Ashley Horner on IG outside doing 300 walking lunges with her 12 day old new-born strapped to her chest and that motivated THE heck outta me.  so i did 300 walking lunges too before heading back home to...

i'm finding it harder and harder to post these kinds of pics to IG because i don't want to discourage our 6 Pack USA clients as they work towards their own fitness goals.  i do maintain my current body fat % using my own personalized plan, but i also indulge in moderation as i am able to easily compensate via my diet and/or exercise for those indulgences to keep me where i want to be. so there! yes, i had a few slices of pizza on game day and i was back on track with no guilt or worries the next day.

Avocado Crema Dip 

the stuff: (source)

  • 3 ripe avocados
  • 1 - 6 oz container 0% greek yogurt
  • 1/2 jalapeno pepper
  • juice of 1 lemon or lime
  • 1/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • cracked black pepper & sea salt to taste

do this:

  1. add all ingredients to your blender or food processor
  2. blend until super-duper creamy (keep scraping down the sides if using a blender)
  3. get scoop happy! you can dip anything you want, but i chose plantain chips and the bell peppers.

switching to the 8oz baby bottles for parties / get-togethers was a great move.  one of my pet peeves is walking around picking up half-finished water bottles at the end of a party!!!! never again. that dip in the center of the veggie plate is just Hidden Valley Ranch Dressing Mix + 0% greek yogurt. my mom gave me that idea but used to use sour cream. so yummy!!! it really brings veggies to life. 20150201_161856_1

love this stuff!! my Sprouts Farmers Market usually has a great variety of flavors too; there are so many to choose from.  we recently tried the Cheddar Caramel Mix and gave it two thumbs way up.  if you're gonna sneak snacks into the movie theater, bring this stuff!

Chicken Cauli-Rice Stuffed Bell Peppers + PWO Grocery Shopping

 awesome workout early this morniiiiing!  finally. after monday's sugar slump (my sister's baby shower was the day before lol) i feel SO much better.  i was determined to flip this week around cause it sure didn't start off too great physically and my motivation was shot. anyway, my cuz Diane told me she would come try my Lifetime classes and by golly she came!! not everybody is ready for HIIT at 5:30am but she totally was and kept her word!  we did some cardio together after this morning's weight class and i'm so glad she enjoyed herself and the club.

making the switch to dairy-free creamer as of today.  this was the only size they had and i need a half-gallon carton or larger for sure.  i've been downing at least one cup of 1/2 caff in the mornings for a while now.

so we are now on week 5 of small group already, my goodness!  i have truly been blessed by meeting with these women to discuss the Word each week and will definitely be open to hosting a small group again in the future. we feasted on these lean ground Chicken-Cauli-Rice Stuffed Bell Peps that you have GOT to try. and when ya do, tag me on Instagram and let me know so i can see!

 i know green bell peppers are the cheapest to buy but i LOVE the taste of, well, all the other colors. ha. especially red! and we know that red bell peps are a collagen boosting food great for helping us moms snap back after pregnancy and for keeping our skin looking great in general.

i used 'riced' cauliflower instead of brown rice so these are chock-full of veggies! do the following:

  1. if raw, wash large cauli head thoroughly and break up into small florets (if frozen, let thaw first then break into florets)
  2. add to food processor and pulse until a rice-like consistency is obtained
  3. in a clean cup towel, add riced cauli and squeeze as tightly as you can to get ALL the moisture out
  4. in a wok coated with no stick cooking spray over med-high heat, add cauli and sprinkle a little garlic and onion powder over it. that's optional though.  stir constantly for about 5-6 minutes or until slightly crispy/cooked.

Chicken Cauli-Rice Stuffed Bell Peps

the stuff:

  • 1 lb extra lean ground chicken
  • 1/2 cup red kidney beans
  • 1 ear fresh sweet corn (or 1/2 cup frozen sweet corn)
  • 1/2 large green bell pep, diced
  • 1 can diced fire roasted tomatoes w/ garlic
  • 10 oz 'riced' cauliflower (see steps above)
  • 1 1/4 cup shredded cheese of your choice (optional to put on top only)
  • 2 tsp sweet smokey paprika (reg paprika will be fine too)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp red pepper flakes
  • 3 tsp parsley flakes
  • 1 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 1/4 cup cilantro (just grab a small bunch and chop it up)
  • 1/2 cup chopped mushrooms of your choice
  • sea salt & cracked black pepper to taste
  • 5 red bell peppers (discard the seeds but don't you dare throw away those tops after you cut them off! dice them up and eat them later)

do this: 

  1. preheat your oven to 350 degrees and coat a baking pan large enough to hold all 5 peppers at once with no stick cooking spray
  2. coat a large skillet with no-stick cooking spray and set it to med-high heat
  3. add garlic, onion, and green bell pepper and saute until translucent (2-3 min)
  4. add lean ground chicken breast and continue to break it up with your spoon into smaller bits as it cooks
  5. once cooked through, add kidney beans, corn, cilantro, tomatoes, and mushrooms, and stir until combined
  6. add cumin, paprika, chili powder, red pepper flakes and 2 tsp of the parsley flakes
  7. add the cauli-rice and 1 cup of shredded cheese and blend once more and taste!
  8. add salt & pepper to your liking and taste again
  9. cut the bottoms flat across the peppers and situate them in your pan (see pic below)
  10. stuff peppers with your chicken mixture and fill them to the brim
  11. add about 3/4 cup of chicken or vegetable broth to the baking pan and bake for 30 minutes covered with foil
  12. remove pan from oven and top peps with remaining cheese; put back in for 5 minutes or until the cheese melts
  13. top with remaining tsp of parsley flakes to make it pretty ;)photogrid_1413933860868

banana berry whole wheat french toast

my Chiso is a snotty mc nasty mess this week.  after taking him to the child center in a new gym, well, the inevitable happened. new gym, new germs.  it's been a looooong week of coughing, whining, and TLC over here, but we made it to FRIDAAAAAY!

this morning i made another batch of banana berry whole wheat french toast...oh yeah.

banana berry whole wheat french toast

the stuff:

  • 2 slices Natures Own double fiber wheat bread
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp raw, unsweetened organic coconut flakes
  • 1 egg white
  • 1/4 cup blackberries
  • 1/2 a banana

do this:

 combine the egg white, almond milk, cinnamon, and vanilla in a shallow bowl big enough to lay your bread flat in and mix it well. dip both slices of bread (front/back) until it is soaked through.  in a medium heated no-stick pan, lay both pieces of bread flat and cook until browned and crispy, about 3-4 minutes.  flip! cook that side until crisp for about 3-4 minutes as well.  plate it up, then top them with the bananas, blackberries, and a drizzle of Walden Farms pancake syrup.  last thing, sprinkle with more cinnamon and coconut flakes!

so....i FINALLY got a Facebook fan page for Fit Foodie Le.  i mean, it's only 2013.  i guess i battled with it for so long cause it's hard as CRAP for me to keep up with social media as it is!!

alright, last thing- a few people tell me how much they absolutely HATE oatmeal (what is WRONG with them!? j/k) and asked me for some alternative breakfast ideas.  when i tell you i was seconds away from posting  a pic of some of the Kashi Go Lean Cereal i bought at the store a few days ago my finger came to a screeeeching halt after googling this:

can i just say i was almost commenter 411 cause this very thing happened to me too!!!!! i was like, wait a minute...i adjusted my macros JUST right to have these 2, ok 4, bowls of cereal for my late night snack and the next morning my tummy was straight MUSH.  bloating and uncomfy gas is not cool. now does Kashi have this effect on everybody?  maybe, maybe not.  however, i will have to add it my bloat list along with broccoli.  it can take time to figure out which foods YOUR body doesn't agree with!  adjust, bounce back, and keep on truckin'. and Googling :lol:

i'll dedicate a separate post to those breakfast alternatives!
