LA road trip - Destiny Christian Center Health Fair

so i got a chance to do my first live cooking demo this past weekend at a health fair held at the Destiny Christian Center in LaPlace, Louisiana :shock: :)

 the day before though, Chiso and i had the pleasure of meeting a fit foodie le supporter in HEB while i was picking up a few last-minute things for our road trip.  i so thought i was being reprimanded for going back to the grape sample bowl too many times, but nope, it was Tiara, a fit mom of two doing some shopping with her mom and just introducing herself!  she asked about getting started with grocery shopping and well, i will cover ALL that and more in my (hopefully) next post. nice meeting you lady.

we hit the road at 3 somethin' AM, homemade egg white & bacon bowls to-go (2 slices sara lee 45 cals & delightful bread for me, 1 whole wheat tortilla for him) in tow.

by the grace of God we made it right on time,

and started setting up immediately.  i made the Mo-Rockin' Chicken and Cold Cucumber & Tomato salad w/ Dill from my ebook, and also whipped up some of my oatmeal banana pancakes.

i spoke to the attendees about healthier ingredients (swaps) when cooking at home, shared a starter grocery list, grocery shopping tips, and concluded with a little Q & A.

then i added Sonny to the presentation so he could give everyone the run down on our personalized health and fitness company, 6 Pack USA!

Food Network ain't ready for me!!!!!! i ain't read for them either though :lol: . those cooking show hosts make it look CRAZY easy. cooking & talking (and making sense) in front of people or a camera is no easy task, but it will just take practice, practice, and  mo' practice for me.

my line sister Santrice so kindly had my e-book printed and binded in color just for my trip and i thank her SINCERELY!!!! i brought them with me to be auctioned off during the raffles at the health fair, and here i am with Kimber, a sweet, helpful woman who gave me SO much great feedback on how to improve and grow after my presentation.  she blessed me greatly and whaddaya know, her name was pulled to win my e-book!

this is my highlight meal for the week:

this filling, savory meal is the Baked Penne with Sausage and Kale from FITzee Foods.  the kale part immediately sparked my taste buds!  whole wheat penne pasta, chicken italian sausage, and fresh kale all baked together with a dairy-free cream sauce, mushrooms, onions, sun-dried tomatoes, and fresh herbs. i'm lovin' it.

my sis-in-law told me about it months ago and after the last adult joke i could stand from Sponge Bob i decided to look it up in our cable directory.

3 words. WHAT A BLESSING.  Chiso has fallen head over heels in love with, well, every single show.  his absolute fave is Caillou.   Caillou games have mysteriously appeared on the iPad and neither Sonny nor myself put them there.  and then there's Tree Fu Tom:

so even if we don't head to the park, he can still move and shake indoors! that makes me one happy fit mom. but not happy enough to clean out that file cabinet.

Chiso sings,  interacts,  learns, & plays SO much more so than when the TV was on Nickelodeon or  Disney.  the Sprout channel caters to his crowd (24 hour pre-school channel) and i have really seen a different side of him these past few weeks.

they have a fantastic, interactive website too! games, videos, and next on our agenda is printing out some of the blank coloring sheets provided of some of his favorite characters (soon as we get some more ink.) i am fond of several of the shows myself; especially The Goodnight Show :lol:.   i really like that they keep some of the classic shows like Sesame Street in rotation too. ooooh the memories. i am just too happy about this and wanted to share.

TJ's visit + my 1st SETX Cluster Conference

Happy Veterans' Day to you all! today we honor all  US veterans and victims of all wars.

i couldn't help but to stop by TJ's this past friday, you know, since i was in the area and all.

i was greeted with all things FALL! the smell of Fall, the look of Fall, the taste of Fall.  the warm apple cider and pumpkin pie samples were the icing on the cake. there was no cake though; i looked.

saturday, my sorority sisters and i attended our very first South Eastern Regional Conference for Alpha Kappa Alpha Sorority, Incorporated!

i even got a chance to meet and take a pic with our gorgeous South Central Regional Director, Chelle Luper Wilson.  She is a very busy mother of four, wow. CYMERA_20131111_093928

attendance was outstanding - we were everywhere!  successful event indeed.

we are on a budget (especially with the holidays coming up) so my debit card was restricted from buying any paraphernalia this time.

20131109_125038_1-1and the food was great :lol:.  of course it was great- the conference was held on my alma mater's campus.  GO COOGS! we had lightly breaded & butterflied chicken breast with a lemon caper sauce, yellow rice, carrots, green beans, and a wheat roll.  a spinach salad preceded our meal, but i couldn't wait yall.  

on sunday we hit up early service at church as usual.  man daylight savings time has been my saving grace this past week!  i've gotten more rest than i have all year.  i've been popping up an hour earlier than usual so i've been able to get more stuff done. i didn't want to exercise at ALL yesterday but since i skipped saturday (i crashed when i got home after the conference) i had to get on out there.

so i did.  1 hour of walking/jogging/running in my neighborhood, 3 sets of walking forward & back lunges down the side-walk and i called it quits.  something IS better than nothing!  thank you to my Instagram #fitfam for the motivation. never fails.

sweet potato pie + Light of Hope Festival

i know Thanksgiving is headed our way, but not that kinda pie yet! we had guilt-free, sweet potato crust pizza for dinner last night from my ebook.

i usually make 3 mini pizzas, but i did a large one for the very first time.

our toppings included: fire roasted all natural pizza sauce, fresh spinach, sliced roma tomatoes, fat-free feta, shredded mozzarella almond cheese,  golden & orange bell peppers, and italian seasoned extra lean ground chicken.

Chiso actually ate a small piece after taking off all the toppings, so i made him a small pie with cheese only. the 'what will Chiso eat today?' saga continues. :shock:

calorie count for 1 piece of crust (1 large pizza cut into 8 slices): 67 cals, 0g fat, 14g carbs,  2g sugar,  2g fiber, 3g protein!

this past weekend i was invited to be apart of the Light of Hope Festival as a community partner! it was an extremely beneficial event that provided free health and educational information for the surrounding communities designed to increase family skills.  i was honored to participate.
