Baked Garlic-Ginger Chicken Meatballs
/happy extra hour of rest daaaaaay😝! guys. our baby girl Kosi will be 3 this month😳. like WHAT??? currently in party planning mode; you already know.
we enjoyed these chicken meat balls for dinner after church and well, i think you should just go ahead and roll some up too cause they are crazy easy (throw everything in a bowl), got bangin’ flavor, and they are the perfect meal prep option. you know you needed one anyway! i gotchu covered. always.
Baked Garlic-Ginger Chicken Meatballs
ingredients:
- 1 lb lean ground chicken (i use 93%)
- 1 tbsp fresh ginger, minced
- 1 tbsp garlic, minced
- 1 tbsp green onion, chopped
- 1 egg, beaten
- 1/2 seasoned panko breadcrumbs
- 1/2 cup vegan parmesan cheese, shredded
- 1 tbsp extra virgin olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- black pepper to taste
instructions:
How to cook Baked Garlic-Ginger Chicken Meatballs
- preheat oven to 400 degrees and coat a large baking pan with no-stick cooking spray
- mix all ingredients together in a large mixing bowl (by hand or spoon, your call!)
- roll the meat mixture in to 25 - 30 mini balls
- bake for 25-30 minutes; keep an eye on them! you can flip them halfway if you'd like...not mandatory though
- get ta' dippin'

3about that baked potato🥔! i am currently outta foil and attempted to make baked potatoes without it for the first time <gasp>. WOWZA. i thought they wouldn’t turn out right without the foil cause i’ve only been making them that way my whole life. after scrubbing and cleaning the skin, i rubbed them down in a lil’ extra virgin olive oil and sprinkled them with sea salt. threw them (3 small russet potatoes) on a baking pan and roasted them for about 40 minutes on 425 degrees. flaky, salty skin on the outside, perfect crumbly, creamy texture on the inside! they reminded me of the ones i used to enjoy at Red Lobster with my family after church growing up❤️.
