Cashew Butter Chocolate Chip Cookies {GF & DF}

I don't even know where to begin🤷🏽♀️.
we are still quarantining and have done so since the 2nd week of march. our gym closed shortly after that.
Sonny has been adamant on keep our family safe, especially our unborn child. i’ve affectionately been referring to him as Sargent Sonny these past few weeks because of his diligence but I’m truly grateful he cares for us so much. that said, i’ve only been to 3 drs appointments solo in the past 4 months and cabin fever set in a good while ago.
the Katy community held a peaceful protest in honor of George Floyd and the fight against racism as a whole in our country recently. I mentioned to Sonny that we should attend with the kids… and he agreed. no explanation needed.
this was our first ‘outing’ together since spring break. Chiso (9) asks a ton of questions these days and Sonny and I do our best to answer them in a 100% honest and age appropriate way. but’s it’s still a difficult conversation to discuss. our kids are 9, 5, & 3. if you have young children as well, here are a slew of books that can help you enlighten and equip your kiddos.

we are prayerful and hopeful for real change.
on a lighter, sweeter note, i made the kiddos some seriously yummy cookies last week too🍪. we got them some subway for lunch but they were out of cookies at the time = huge bummer for the kids. i told them not to fret and that i would whip some up for them! these are so much better for them of course! they are also gluten & dairy-free.
I also made some banana nice cream for ice cream sandwiches later but HA. the cookies were all gone before the ice cream got a chance to set in the freezer. they are that good and irresistible, i’m telling you!
they bake up super fast in only 11 minutes! the kids definitely followed me outside for this photoshoot.
they last for about 4 days buuuut this recipe only makes 12 big cookies. 4 days is a stretch, trust me.
you can absolutely make smaller cookies but that will change the nutritional stats of course.
i bet you have all the ingredients for these bad boys already! yes, you can sub peanut butter for the cashew butter 😀. almond butter works too.
Cashew Butter Chocolate Chip Cookies
Ingredients:
- 3/4 cup old fashioned oats
- 1/2 cup cashew butter
- 1/2 cup organic cane sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 cup dairy-free chocolate chips
Instructions:
- 🍪combine cashew butter, egg, vanilla, and sugar until creamy
- 🍪add oats, baking soda, and salt and combine well
- 🍪fold in chocolate chips
- 🍪bake for 11-12 min on 350°
