Turkey BBQ Bacon Meatloaf🥓

don’t know what to make for dinner (any night this week)?! see below🙂
this turkey meatloaf recipe was on my old blog(s) and needed an update, pictures included.
you can use your favorite bbq sauce in and on top of the dish, but if your fave sauce is a sweeter variety (i.e. honey), you won’t need to add the brown sugar.
BBQ Bacon Turkey Meatloaf
ingredients:
- 1 lb ground turkey (i use 93% lean)
- 4 slices bacon, cooked, diced
- 1 tbsp worcestershire sauce
- 1 tbsp bbq sauce
- 1/4 cup red bell pepper, minced
- 1/2 cup onion, minced
- 2 small cloves garlic, minced
- 1 tbsp olive oil
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup non-dairy milk
- 1 large egg
- 1 tsp dried parsley
- 1/2 tsp paprika
- 1 tsp Italian seasoning
- sea salt to taste
- cracked black pepper taste
- topping:
- 1/3 cup bbq sauce
- 1 tbsp dijon mustard
- 2 tbsp brown sugar
instructions:
How to cook BBQ Bacon Turkey Meatloaf
- preheat oven to 350
- in a small skillet set to medium-low heat, add olive oil
- add garlic & onion and sauté until translucent and fragrant, about 4-5 minutes then remove from heat
- to a large mixing bowl, add turkey, egg, breadcrumbs, onion, garlic, bell pepper, worcestershire sauce, bbq sauce, parsley, sea salt, pepper, and 2 slices of diced bacon.
- mix very well! (by hand is recommended)
- place mixture in a loaf pan (or you can use a baking sheet and shape mixture into a loaf)
- spoon your sauce on top and sprinkle remaining 2 diced slices of bacon on top
- bake uncovered for 55 minutes
- Let meat rest for about 10 minutes before slicing
- garnish with fresh parsley or green onion and enjoy!
