20150227_081930_1 so.... Sonny was laid off from his Lead Network Administrator job last wednesday! that morning, i was finishing up nursing Dego and simultaneously saying a prayer of thanks to God out loud.  i never want to get in the habit of always asking God for things.... it shouldn't be like that.  so i randomly started saying thank you for everything i could think of that i might have taken for granted!  until i was interrupted by Sonny's phone call.  'welp, i just got laid off!' was the first thing he said, which was followed by an 'oh wow...' from me.  my initial, honest reaction in my head though was 'really, God??well, we're listening.' Sonny had been preparing for this day, hence his Facebook status:

and warning me about the ongoing employee cutbacks other companies were making. however, i still have a bad habit of thinking we are somehow exempt and that 'those kinds of things' can't happen to us. ha! every once in a while i have to be reminded that His plans > our plans.  sometimes when we find ourselves floating down that comfy, stagnant river, He will abruptly turn the boat right on over.  thankfully, we have been presented with some really awesome opportunities as well as more time to focus on our fitness company, 6 Pack USA.   for that, we are extremely grateful!  i'm most excited about Sonny having more time to spend with his boys, especially at their ages. looking for the good in a seemingly tragic situation is not easy,

but when you place your future in His hands completely there is absolutely no room for stress and/or worry.  i snapped that pic of Sonny heading out the door friday (well, barely, he wouldn't slow down lol) for his last official day. we are boldly stepping out on faith and ready for this new plot twist in our story.  here we go!


i am a mac & cheese freak!!!!! Luby's is where i get my fix if it's not homemade. it's prolly my fave comfort food besides pizza.  aaaand if it ain't creamy, it just ain't right.

this recipe is lightened up and full of VEGGIES. most important, the creaminess factor is still strong, as it should be.

my veggies of choice: fresh asparagus and portabella mushrooms.  broccoli would work very well here too.

cheese choice is up to you, but i went with part-skim mozzarella.

i'm not sure how it would work with almond or rice cheese, but if you try it let me know! that would make this entire dish dairy-free.

any type of pasta works here: penne, corkscrew, bowtie, maccaroni, whatever!  and you can sub whole wheat pasta as well.

Veggie Packed Cheesy Mac 

the stuff:(source)

  • 1 1/4 cups low sodium chicken broth
  • 1 1/2 cups unsweetened cashew milk
  • 3 cups butternut squash, cubed
  • 2 tbsp Toffuti dairy-free cream cheese
  • 2 cups shredded cheese of choice
  • 1 lb cooked pasta
  • 1/2 lb  vegetable of choice
  • 2 tbsp shallot, minced
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • optional: 1/2 cup whole wheat bread crumbs for topping

do this:

  1. pre-heat oven to 375 degrees and coat a large 13 x 9 baking pan with no-stick cooking spray
  2. in a large saucepan, combine butternut squash, chicken broth, milk, and shallots and bring to a boil.
  3. let simmer for about 20 min or until squash is tender
  4. cook pasta while squash mixture is simmering
  5. pour hot squash mixture in your blender and add cream cheese, salt, and pepper
  6. blend until super creamy and smooth
  7. add squash mixture back to your sauce pan and sprinkle in your shredded cheese
  8. stir until combined and melted
  9. add all veggies and cooked pasta, stir until combined, then transfer to your prepared baking dish
  10. sprinkle optional whole wheat bread crumbs over the top (i toast my own wheat bread then make crumbs via my food processor) and bake in the oven for 20-25 minutes or until browned

it took about 9 minutes just to get to the very front and start running! all that body heat kept us warm though.

 i left my house late (unsurprisingly) and with the street closures and all ended up parking pretty far.  i pretty much ran a dang 5k through downtown before the race started!  i don't ever pay for parking downtown if i can avoid it; i'd rather walk and just save a few bucks.  i was tempted this time though cause i didn't want to be late, but i made it, whew.

stats were posted tonight and my official time was 26:41!  i did set a PR of 24, but i'm thinking if i actually take the time to train correctly then maybe i'd actually hit it or come close smh! i love the challenge and i'm up for it.

2015-01-17_09.02.081so Sonny has been in Nigeria all week long for work and was supposed to touch down in Houston at 5am this morning. however, his flight was canceled and he had to hop on the next available one.  i sure would have loved to see him at the finish line, but i did find two of my gorgeous Sorors there, Ayesha and Crystal.  they are both doing the full marathon tomorrow; run hard ladies and good luck!!.

after boot camp? a leg workout with my trainer, @showtimefitness of course!

 'what seems impossible today will one day become your warmup.' yes. i remember running my very first 5k a few years ago and not moving or lifting a finger afterwards for like 3 days straight! i was crazy tired & super sore and could have easily said 'screw running'and never did another race again. one of the hardest decisions we face in life is choosing whether to walk away or try harder. well, i chose the latter! how do you get better at something? DO IT MORE! no earthly idea how many 5 and 10ks (1 half mar) i've done since then but because i refused to quit, consistency had me up in the gym post-5k yesterday beasting through an intense full body workout with my trainer @showtimefitness. and you better believe there's a full marathon on my to-do list! just keep going. don't quit. consistency is key.

i actually love being trained as much as i love to instruct the trainings with my own clients!  Brian is awesome at what he does and i always learn more than a handful of things from him.

then... i headed to Luby's for dinner to celebrate. i can ALWAYS count on a great, tasty, healthy meal from there.  i don't care that the population is 80% senior-citizen per my husband!  i have so many childhood memories from Luby's. it was a sunday, after church staple for my family growing up.  anyway i got the salmon, steamed cabbage, seasoned carrots, pickled beets & cucumbers, and...... 20150117_161233_1 yes. THE BEST EVER. if you don't like mac n cheese we cannot be friends!!!!!!!! i earned it and i enjoyed every single bite.

Happy Father's Day to all fathers- earthly and the one and only heavenly!

since i am currently in competition mode, for once we didn't go out to eat to celebrate:(  it's crazy cause that's normally the very thing we do.  celebrations call for EATING in our house.  couldn't even do fro-yo :evil:  all in due time though.  we spent QT with our families and each other:

 i didn't make Sonny suffer completely- we went to my parents house to visit my folks and my mom cooked a nice T-bone steak meal for my dad.  for the first time ever, i could only smell and look but not touch or eat:

talk. about. torture.  mac n cheese is at the TOP of the list of foods i can't wait to eat again.

if not, consider it.  there are soooo many makes and models, but a basic one is all you'll ever need, IMO.  i did check out some reviews first.  how they enhance your workouts:

  • accurate calorie counter- who doesn't want to know this info??  don't trust that elliptical or treadmill number :-|
  • ensure you are at an appropriate intensity level.  if your heart rate gets too high your activity can become counter productive;  too low and you're not pushing hard enough to gain any substantial health benefits.
  • find and monitor your target heart rate (50-85% of your maximum HR).  you can find this number *roughly* by subtracting your age from 220.
  • your watch will tell you which zones you are in so that you can burn optimal fat, carbohydrates, or sugar.
  1. fat burning 50-60% ideal for endurance and weight loss; the body uses stored fat as fuel.
  2. endurance 60-70% ideal for endurance and weight loss; the body uses stored fat as fuel.
  3. aerobic 70-80% cardiovascular and muscular strength and endurance; burns fats and carbs in this zone.
  4. anaerobic 80-90% enhances lung capacity; muscles become tired and breathing becomes heavy. working hard and burning sugar.
  5. V02 Max 90-100% helps enhance speed in athletes; can only exercise in this zone for a short period of time as the muscles go quickly into oxygen debt.
  • prevent overtraining - maximize the efficiency of your training while minimizing the opportunity for injury.
  • provides feedback on your improvements over time.
