school has begun for most families and i am sharing a super easy, yummy weeknight recipe that anybody can make! my Light Chicken Parmesan is a classic and staple meal in our household. i use Mazola® Corn Oil to make it because it has a neutral taste so that the flavors of the dish can truly shine through.  when it comes to choosing a cooking oil, i want you guys to know that a clinical study showed Mazola Corn Oil reduces cholesterol 2x more than extra virgin olive oil!

 instead of submerging the breasts in oil, we’re keeping things light and searing the chicken on both sides before baking to lock in the juiciness and flavors instead!

the breading is super simple and there is no egg dip required to get the chicken nice and crispy.  one less step to do.

so, not only will Hubs and i be celebrating our 13th wedding anniversary as well as meeting baby number 4 next month, September is also National Cholesterol Awareness month! you can eeeeasily reduce the saturated fats and cholesterol in your meals by substituting butter with Mazola Corn Oil. once the chicken has been seared on both sides, add your entire skillet to the oven to ensure it cooks all the way through.

now for the best part! once cooked through, top your chicken breasts with pizza sauce and sprinkle them with plenty of mozzarella cheese. add your pan back to the oven so everything can get all bubbly and melty.

quick, flavorful weeknight meal!

Ingredients:

  • 2 tbsp Mazola Corn Oil
  • 6 boneless skinless chicken breasts, pounded thin
  • 1/2 cup whole wheat breadcrumbs
  • 1 tsp dried oregano
  • 1/3 cup vegan parmesan cheese
  • Sea salt to taste
  • Cracked black pepper to taste
topping
  • 1 cup shredded almond mozzarella 
  • 3/4 cup pizza sauce or marinara
  • 1 cup fresh baby spinach, chopped

Instructions:

  1. Preheat oven to 425 degrees 
  2. Add 2 tbsp of mazola corn oil to your skillet set over med-high heat
  3. In a pan, add breadcrumbs, parmesan cheese, oregano, sea salt, black pepper and combine well.
  4. Coat chicken on both sides in the crumb mixture, then add breasts to your hot skillet.
  5. Sear for 3- 3.5 min on each side (depending on the thickness of the chicken; just don’t burn it!)
  6. Take your skillet and add it to your oven to cook for 5-10 more minutes until chicken is cooked through.
  7. Take skillet out of the oven and spoon pizza sauce on top of the chicken breasts. then, sprinkle them with a generous portion of shredded mozzarella.
  8. Place skillet back into the oven for 5 more minutes or until cheese is bubbly and melted!
  9. Sprinkle hot chicken with chopped spinach and serve!
