Chunky Banana Cakes + Praise & Pilates Spring 2019

so. super serious question comin’ atcha.

i have made so many variations of banana pancakes for the past few years and here is yet another one your tummy will love and appreciate.
Chunky Banana Cakes
ingredients:
- 2/3 cup oat flour
- 2/3 cup all purpose flour
- 1 cup unsweetened vanilla cashew milk
- 1 tsp vanilla
- 2 tbsp cane sugar or maple syrupor 1 packet of granulated Stevia
- 1 large ripe banana
- 2 tbsp coconut oil, melted
- 1/2 tsp salt
- 2.5 tsp baking powder
instructions:
- sift and combine dry ingredients together in a large mixing bowl
- in a small, separate mixing bowl, add banana and mash with melted coconut oil, vanilla, sugar. add milk and combine.
- combine wet and dry mixtures by hand (batter will be chunky)
- set skillet to med-high heat and coat with no-stick cooking spray
- i used 2 tbsp worth of batter to make about 16 pancakes. add batter to your skillet and once bubbles appear (about 1.5 min), flip pancakes immediately and cook for about another minute.
- top with dairy-free butter, maple syrup and enjoy!

Praise & Pilates Spring 2019 is underway! we didn’t meet over spring break last week, and i truly missed connecting with my ladies and working them out! listening to these women who are in all different seasons of life and their perspectives as it relates to God’s word has had a profound effect on my own spiritual walk.
(Fall semester)
we come together as we are,
we pray with and for each other,
we workout and get our feel good endorphins going while lengthening and strengthening our bodies through Pilates,
we read and discuss a devotional (we are using Unrushed this semester, loooove),
we enjoy healthy, nourishing snacks,
we leave empowered and encouraged.
