Bacon Wrapped Maple Sweet Potato Wedges

many moons ago i would stop eating the day before Thanksgiving and wouldn’t eat again until the big meal. that’s ALWAYS a terrible idea, friends. you can prolly guess what happened; i was SUPER hungry by dinner time and ended the day SUPER stuffed, sleepy, and sick. now that i know better, i absolutely eat breakfast as usual the morning of Thanksgiving (and not just because we traditionally run the Turkey Trot Houston every year either! by the way, use my ambassador code FITFOODIE5 and get 5 bucks off your registration!). starting your day with movement is always a good idea, holiday or not.

i also have a habit of snacking while cooking, and i approach Thanksgiving day the same way! little bites here and there keep me full of energy and far away from hanger pains.

this sweet & savory combo tastes as magnificent as it sounds and looks so fancy! they are super easy to make though. and the homemade guacamole for dipping!? Ooowee🥑

I sliced up a combo of garnet yams and purple sweet potatoes but you may use whatever variety you desire. TIP: i typically try to chose long, semi-thin sweet potatoes because they are easiest to peel and cut into wedges/fries.

i also used Simple Truth Organic maple syrup, Private Selection ground cinnamon, and fresh thyme from my local Kroger.

i let the wedges sit in the butter sauce mixture for about 10 minutes before continuing.

make sure you cut the wedges thick and wrap the bacon around each individual wedge in a spiral motion. baste them with the butter sauce before going into the oven (and once more half way through cooking if desired; it’s optional! they are still full of flavor even if you don’t).

the bacon crisps up and gives each sweet, buttery bite a salty crunch!

How to cook Bacon Wrapped Maple Sweet Potato Wedges

  1. preheat oven to 400 degrees
  2. prepare a baking sheet with foil or wax paper and coat it with no-stick cooking spray
  3. in a bowl, add butter, sugar, syrup, cinnamon, pepper, and salt
  4. microwave together for about 15 seconds
  5. add sweet potato and toss to coat (reserve liquid to baste wedges halfway through baking)
  6. wrap each wedge with one slice of bacon in a spiral motion
  7. place the wedges on the prepared baking sheet.
  8. bake for 30-35 minutes or until sweet potatoes are tender and bacon is crispy (using remaining sugar/butter mixture, baste the wedges halfway during cooking)
  9. sprinkle with fresh thyme leaves
