Ingredients
- 3 ripe bananas
- 2 cups gluten-free 1:1 baking flour
- 1/2 cup light brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup chia seeds
- 2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup non-dairy milk
- 2 tsp lemon juice
- 1 tsp vanilla extract
- 1/4 cup coconut oil
- 1/4 cup pure maple syrup
- 1/2 cup lactose-free greek yogurt
Instructions
- to a small bowl, add non-dairy milk and lemon juice to make buttermilk; let sit for 10 min.
- to your mixer, add bananas, maple syrup, brown sugar, chia seeds, yogurt, coconut oil, milk, and vanilla extract until just combined
- in a separate bowl, combine flour baking soda, baking powder, cinnamon, and salt and combine
- add dry ingredients into the wet and mix gently until just combined but be careful to not overmix.
- coat your mini pan with non-stick cooking spray and add a heaping tbsp to each muffin tin. I made about 52 mini muffins
- bake for 13-15 minutes or until an inserted toothpick comes out clean
