Zesty Parmesan Meatballs

ingredients:
- 1 lb 93% lean ground chicken
- 1 whole egg, beaten
- 1 stalk green onion, chopped
- 2 cloves garlic, minced
- 2 tsp coconut aminos
- 3 tbsp whole wheat bread crumbs
- 3 tbsp vegan parmesan cheese, grated
- 1 tbsp brown sugar
- 1/2 tsp paprika
- 1/4 cup fresh cilantro, minced
- 1/2 tbsp lemon zest
- 1 tsp onion powder
- sea salt & cracked black pepper
- 1 tbspolive oil
- 2 tbsplight dairy-free butter
instructions:
- in a large bowl, add chicken mixture plus all ingredients. mix very well.
- form meat mixture into meatballs; you should make about 22-25.
- add the butter and olive oil to a medium heated pan. once melted, add meat balls.
- let the meatballs cook for 3 minutes, then rotate them and let them cook for another 3 minutes.
- do this until the meatball is cooked through on all sides.
