Zesty Parmesan Meatballs

Ingredients

  • 1 lb lean ground chicken
  • 1 whole egg, beaten
  • 1 stalk green onion, minced (whites only; save the green for garnish)
  • 1 tbsp minced garlic, minced
  • 2 tsp coconut aminos
  • 3 tbsp vegan parmesan cheese, grated finely
  • 3 tbsp vegan Italian breadcrumbs
  • 1 tbsp brown sugar
  • 1/2 tbsp lemon zest
  • 1/2 tsp garlic salt
  • 1/4 tsp cracked black pepper

Instructions

  1. in a large bowl, add chicken mixture plus all ingredients except the butter and oil.
  2. mix very well by hand
  3. form meat mixture into meatballs; you should make about 22-24.
  4. add the butter and olive oil to a medium heated pan. once melted, add meat balls in batches (cook 8 at a time)
  5. let the meatballs cook for 1.5 minutes, then rotate them to a non-cooked side every 30 - 60 secs until cooked on all sides (do this about 4 or 5 times around each meatball)

Notes

-add water to your fingertips and palms the rolling to prevent the mixture from sticking to your hands.

-cooking time is 5-6 min per batch
