Zesty Parmesan Meatballs

Ingredients
- 1 lb lean ground chicken
- 1 whole egg, beaten
- 1 stalk green onion, minced (whites only; save the green for garnish)
- 1 tbsp minced garlic, minced
- 2 tsp coconut aminos
- 3 tbsp vegan parmesan cheese, grated finely
- 3 tbsp vegan Italian breadcrumbs
- 1 tbsp brown sugar
- 1/2 tbsp lemon zest
- 1/2 tsp garlic salt
- 1/4 tsp cracked black pepper
Instructions
- in a large bowl, add chicken mixture plus all ingredients except the butter and oil.
- mix very well by hand
- form meat mixture into meatballs; you should make about 22-24.
- add the butter and olive oil to a medium heated pan. once melted, add meat balls in batches (cook 8 at a time)
- let the meatballs cook for 1.5 minutes, then rotate them to a non-cooked side every 30 - 60 secs until cooked on all sides (do this about 4 or 5 times around each meatball)
Notes
-add water to your fingertips and palms the rolling to prevent the mixture from sticking to your hands.
-cooking time is 5-6 min per batch
