The moist and fluffy banana bread is GF, protein packed, and made with no butter or oil!
Ingredients
batter
- 1.5 cups GF flour
- 1/2 cup greek yogurt
- 1/2 tsp baking soda
- 1 tsp vanilla
- 1/2 cup brown sugar
- 1/4 cup monk fruit sweetener
- 1/2 tsp salt
- 2 eggs, beaten
- 2 bananas, ripe and mashed
- 1/2 cup chocolate chips
- 1/4 cup pecans (optional)
Instructions
- preheat your oven to 350 degrees and coat bread pan with non-stick cooking spray or line with parchment paper
- add the flour, baking soda, salt in a large mixing bowl and combine.
- combine the brown sugar, monk fruit sweetener, eggs, greek yogurt, vanilla, and bananas, in a smal mixing bowl until blended
- pour wet ingredients into dry and slowly mix until just incorporated.
- pour bread batter into your prepared pan and top with chocolate chips and pecans if desired
- bake for 40-45 min or until an inserted toothpick comes out clean
