Vegan Veggie Pasta Sauce

6 different veggies in this creamy, velvety, nutrient-rich sauce! pour it over the pasta of your choice and even add lean protein for a blanked meal.

Ingredients

  • 3 cups cooked pasta of choice
  • 2 tbsp grapeseed or olive oil
  • 4 roma tomatoes
  • 1 red bell pepper
  • 1 large zucchini
  • 1 large squash
  • 1 cup carrots
  • 1 yellow onion
  • 3 garlic cloves
  • sea salt & cracked black pepper
  • 1/2 cup coconut milk (or more)
  • 2 tbsp plant butter

Instructions

  1. set a large pot of water to boil and add a generous tbsp of salt
  2. cook 3 cups of pasta of choice
  3. coat a large baking pan with non stick coking spray
  4. roughly chop veggies, add them to pan and drizzle with oil, salt, & pepper
  5. roast for 45 minutes on 400 degrees
  6. add veggies to your high powered blender and puree until super smooth
  7. set a large skillet to medium heat and add 2 tbsp of plant butter
  8. add sauce to skillet and stir sauce until cohesive and smooth. add in coconut milk and continue to stir.
  9. lastly, add in cooked pasta and stir until coated evenly. taste! adjust and add more salt & pepper if needed.
  10. serve hot!
