Vegan Twice Baked Potatoes

Ingredients
- 2 large russet potatoes
- 1 tbsp olive oil
- 1/3 cup vegan cream cheese
- 2 tbsp melted vegan butter
- 1/3 cup green onion, separate white & green parts
- 1 cup vegan cheddar cheese, shredded
- 2 strips bacon, cooked, crumbled
- sea salt to taste
- cracked black pepper to taste
Instructions
- preheat oven to 400 degrees
- scrub and clean potatoes then rub them down with olive oil and prick them all over with a fork
- wrap in foil and bake for 1 hour on a baking sheet
- once baked, halve potatoes and gently scoop out the inside flesh and transfer it to a mixing bowl
- save the shells of the potatoes and place them back on your baking pan
- to the mixing bowl along with the potato mixture, add cream cheese, butter, green onion, 1/2 cup shredded cheese, and sprinkle with sea salt and pepper.
- combine well; scoop mixture into the shells of the potatoes on the baking sheet. sprinkle with remaining cheese and crumbled bacon
- place back into the oven for 10 min or until the cheese on top has melted.
- garnish with the green parts of the green onion or fresh chives!
