Vegan Twice Baked Potatoes

Ingredients

  • 2 large russet potatoes
  • 1 tbsp olive oil
  • 1/3 cup vegan cream cheese
  • 2 tbsp melted vegan butter
  • 1/3 cup green onion, separate white & green parts 
  • 1 cup vegan cheddar cheese, shredded
  • 2 strips bacon, cooked, crumbled 
  • sea salt to taste
  • cracked black pepper to taste

Instructions

  1. preheat oven to 400 degrees
  2. scrub and clean potatoes then rub them down with olive oil and prick them all over with a fork
  3. wrap in foil and bake for 1 hour on a baking sheet
  4. once baked, halve potatoes and gently scoop out the inside flesh and transfer it to a mixing bowl
  5. save the shells of the potatoes and place them back on your baking pan
  6. to the mixing bowl along with the potato mixture, add cream cheese, butter, green onion, 1/2 cup shredded cheese,  and sprinkle with sea salt and pepper.
  7. combine well; scoop mixture into the shells of the potatoes on the baking sheet. sprinkle with remaining cheese and crumbled bacon
  8. place back into the oven for 10 min or until the cheese on top has melted. 
  9. garnish with the green parts of the green onion or fresh chives!
