Vegan Key Lime Pies

cool, creamy, tangy key lime filling paired with a crunchy graham cracker crust!

  1. preheat oven to 350
  2. to your food processor, add graham crackers and sugar
  3. drizzle in melted butter and pulse food processor until crumb consistency is achieved
  4. press about 2 tbsp of the crumb mixture into the bottom of your muffin tin (using a small cup or glass to press the mixture down helps a lot)
  5. bake for about 10 minutes and let cool
filling
  1. to your food processor, add all filling ingredients except one of the teaspoons of lime zest and blend until super smooth and creamy
  2. pour into muffin tins on top of the baked graham cracker crusts and top them with the remaining tsp of lime zest
  3. place in freezer for 2 hours minimum to set
  4. thaw at room temp for about 10 minutes before enjoying!
