Vegan Key Lime Pies

cool, creamy, tangy key lime filling paired with a crunchy graham cracker crust!
ingredients:
crust
- 8 full graham crackers ( 1 pack)
- 1/4 cup melted dairy-free buttery spread
- 1 tbsp organic cane sugar
filling
- 1 cup raw cashews, soaked
- 1/2 cup coconut cream
- 1/4 cup sweetened condensed coconut milk
- 1/4 cup coconut oil, melted
- 1/2 cup fresh lime juice
- 2 tsp lime zest
- 1/3 cup honey w/ stevia
- pinch of sea salt
instructions:
crust
- preheat oven to 350
- to your food processor, add graham crackers and sugar
- drizzle in melted butter and pulse food processor until crumb consistency is achieved
- press about 2 tbsp of the crumb mixture into the bottom of your muffin tin (using a small cup or glass to press the mixture down helps a lot)
- bake for about 10 minutes and let cool
filling
- to your food processor, add all filling ingredients except one of the teaspoons of lime zest and blend until super smooth and creamy
- pour into muffin tins on top of the baked graham cracker crusts and top them with the remaining tsp of lime zest
- place in freezer for 2 hours minimum to set
- thaw at room temp for about 10 minutes before enjoying!
