Fast Food Fries

ingredients:
- 2 medium russet potatoes
- 1 tbsp extra virgin olive oil
- 1 tbsp potato starch
- 1/2 tsp organic garlic salt
- organic black pepper to taste
instructions:
- boil a pot of water + a tsp of salt (add enough water to cover the potatoes)
- slice potatoes into fries, about 1/2 inch thick
- once the water boils, add sliced potatoes and blanch for no more than 2 minutes
- drain and pat potatoes dry. in a large mixing bowl with a lid, add fries, starch, olive oil, and seasonings
- place lid on the bowl and shake it vigorously, until the fries are coated well
- press the french fry button on your fryer and adjust the temp to 375 degrees, and the time to 16 minutes. check/shake the fries halfway through
NOTES:
for crispiest fries, eat them immediately! you can use any seasonings you'd like besides the garlic salt (lemon pepper, mrs. Dash, cajun, etc.) if you'd like them crispier, browner, etc, just cook them a little longer.
