Sweet Potato Latkes

savory, crispy, sweet potatoey goodness!
Ingredients
- 12 oz sweet potato, shredded
- 4 oz shredded russet potato
- 2 stalks green onion, chopped
- 1/4 cup yellow onion, diced finely
- 1/3 cup cassava flour
- 2 eggs, beaten
- 1 tbsp coconut aminos
- sea salt + cracked black pepper to taste
- 1 tbsp grapeseed oil
Instructions
- in a large mixing bowl, add all ingredients together and mix very well (no dry spots!). let sit 5 minutes minimum
- set a large, non-stick skillet to medium heat and add grapeseed oil
- with your hands, mold and pat together mixture (scoop out about the size of 2 golf balls) to about 1/2 an inch thick (not too thin or thick though)
- once the oil is hot, add latke to your pan and sear for about 4 min per side or until golden brown
- keep latkes warm and covered until you finish your batches!
- top with vegan Greek yogurt & fresh chives
Notes
keep in mind that your pan will get hotter and hotter as you work in batches, so taper off the heat as you go.
