Steak Fried Rice

ingredients:
- 1 lb marinated steak cut into bite sized pieces*
- 2 cups cooked rice*
- 2 tsp sesame oil
- 2 tsp olive oil
- 3 tbsp light dairy-free butter
- 2 medium garlic cloves, minced
- 1/3 cup frozen peas
- 1/3 cup frozen corn
- 1/3 cup chopped carrots
- 3 eggs, beaten
- 4 tbsp coconut aminos
- 2-3 stalks green onion, chopped
- 1/8 tspgarlic salt
- sea salt & cracked black pepper
instructions:
How to cook Steak Fried Rice
- in a bowl, add steak bites + 2 tbsp minced garlic, + 2 tbsp coconut aminos and let marinate for 30 min if you have time.
- to a large pan over high heat, add sesame oil, avocado oil, and 1 tbsp of light dairy-free butter
- add steak bites and cook for about 60-90 seconds. {pan must be hot! if it doesn't sizzle when you drop the steak bites in it's not hot enough!) flip steak bites and cook on the opposite side for an additional 60-90 seconds. remove steak bites from the pan and set them on a plate. pour the juices from the pan directly on top of the steak bites and cover immediately. set aside.
- reduce heat to medium
- in the same skillet (if the skillet residue is burnt or black, you can wipe it out with a paper towel or cup towel and begin again from here. add remaining 1 tbsp of butter
- add 1 clove minced garlic, peas, carrots, corn, and let sauté in the butter for 2-3 minutes, ensuring the garlic does not burn.
- sprinkle 1/4 garlic salt onto the the veggies and mix well
- push all the veggies to one side of the pan and add your beaten egg to your skillet
- scramble with a fork until just cooked through
- now, everybody into the pool! add the cooked rice, steak bites, green onion, remaining tbsp of butter, and drizzle the coconut aminos over everything, especially the rice. combine and mix well (the white rice should be browned in color from the aminos)
- sprinkle with sea salt and cracked black pepper and taste!
