hearty, flavorful, good-for-you salmon burgers!

Ingredients

  • 1 1/4 lb fresh salmon, diced finely
  • 2 oz vegan feta
  • 1 tbsp fresh parsley
  • 1 tbsp fresh dill
  • 1 tbsp cilantro
  • 1 cup fresh spinach, chopped
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 tbsp lactose-free greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tbsp coconut aminos
  • 1/2 tbsp olive oil
  • cracked black pepper
  • sea salt

Instructions

  1. if you have a food processor, great! if not, great! just dice your salmon finely before mixing.
  2. add all ingredients (except olive oil) to your bowl or pulse lightly in your food processor until the mixture just comes together.
  3. coat a large skillet with no-stick cooking spray and 1/2 tbsp olive oil and set it to medium heat.
  4. form 4 oz patties with your hands and cook them in batches; 3:30-4:00 minutes per side.
  5. keep them warm and covered until you’ve cooked all patties.
  6. toast your bread, assemble your sandwich, add your toppings.
  7. enjoy!
