hearty, flavorful, good-for-you salmon burgers!
Ingredients
- 1 1/4 lb fresh salmon, diced finely
- 2 oz vegan feta
- 1 tbsp fresh parsley
- 1 tbsp fresh dill
- 1 tbsp cilantro
- 1 cup fresh spinach, chopped
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2 tbsp lactose-free greek yogurt
- 1 tbsp fresh lemon juice
- 1 tbsp coconut aminos
- 1/2 tbsp olive oil
- cracked black pepper
- sea salt
Instructions
- if you have a food processor, great! if not, great! just dice your salmon finely before mixing.
- add all ingredients (except olive oil) to your bowl or pulse lightly in your food processor until the mixture just comes together.
- coat a large skillet with no-stick cooking spray and 1/2 tbsp olive oil and set it to medium heat.
- form 4 oz patties with your hands and cook them in batches; 3:30-4:00 minutes per side.
- keep them warm and covered until you’ve cooked all patties.
- toast your bread, assemble your sandwich, add your toppings.
- enjoy!
