Spinach Mushroom & Sweet Potato Schramble

a hearty, healthy way to start your day! tender sweet potatoes, sauteed greens, fluffy eggs all come together for this protein and fiber packed breakfast.

Ingredients

  • 1 cup baby spinach or kale
  • 1/2 cup cubed Sweet potato
  • 5 Baby bella mushrooms, chopped
  • 2 oz fresh yellow onion, minced
  • 1 clove Peeled garlic, minced
  • 1/2 tablespoon olive oil
  • 1/4 tsp smoked paprika
  • 1 tbsp plant-based butter
  • 1/2 tsp curry powder
  • 1/2 tsp garlic salt blend
  • cracked black pepper to taste
  • coconut cooking oil spray
  • 1/2 cup egg whites + 1 whole egg

Instructions

  1. coat large skillet with cooking spray and set to medium high heat. add olive oil
  2. dump in diced onion and minced garlic and stir around until translucent, about 1-2 min
  3. add sweet potato and coat with more cooking spray as needed; let sweet potato soften for about 3-4 min
  4. sprinkle with smoked paprika, curry powder, salt, and pepper
  5. dump in mushroom and spinach and sauté for 2-3 more minutes as spinach wilts
  6. make a well in the center of the schramble and add tbsp of butter. once melted, add egg whites; cook/scramble them all together until cooked through
  7. add fresh toppings if desired (i love chopped tomatoes and avocado) and enjoy!
