
Spinach Mushroom & Sweet Potato Schramble

a hearty, healthy way to start your day! tender sweet potatoes, sauteed greens, fluffy eggs all come together for this protein and fiber packed breakfast.
Ingredients
- 1 cup baby spinach or kale
- 1/2 cup cubed Sweet potato
- 5 Baby bella mushrooms, chopped
- 2 oz fresh yellow onion, minced
- 1 clove Peeled garlic, minced
- 1/2 tablespoon olive oil
- 1/4 tsp smoked paprika
- 1 tbsp plant-based butter
- 1/2 tsp curry powder
- 1/2 tsp garlic salt blend
- cracked black pepper to taste
- coconut cooking oil spray
- 1/2 cup egg whites + 1 whole egg
Instructions
- coat large skillet with cooking spray and set to medium high heat. add olive oil
- dump in diced onion and minced garlic and stir around until translucent, about 1-2 min
- add sweet potato and coat with more cooking spray as needed; let sweet potato soften for about 3-4 min
- sprinkle with smoked paprika, curry powder, salt, and pepper
- dump in mushroom and spinach and sauté for 2-3 more minutes as spinach wilts
- make a well in the center of the schramble and add tbsp of butter. once melted, add egg whites; cook/scramble them all together until cooked through
- add fresh toppings if desired (i love chopped tomatoes and avocado) and enjoy!
