Spicy Cashew Queso

chips, pretzels, veggies, nachos, you name it! you will not believe this isn't dairy-cheese!
ingredients:
- 1 cup raw cashews soaked in hot water*
- 3 tbsp nutritional yeast
- 1/4 tspchili powder
- 1/2 tsp garlic powder
- 1/4-1/2 tsp salt
- 1/4 tsp turmeric
- 1/4 cup + 1 tbsp water
- 1 tbsp lemon juice
- 1/4 cup diced tomatoes in cilantro & lime juice (do not drain)
instructions:
- add all ingredients EXCEPT** diced tomatoes to your high powered blender and blend until super smooth and creamy.
- transfer to a small mixing bowl and add diced tomatoes; stir until combined
- this dip tastes better and better as the flavors marry in the fridge!
NOTES:
soak your cashews in very hot water for at least 30 minutes. i usually soak them overnight for creamiest results. **for the recipe image, i combined the tomatoes in with the rest of the ingredients instead of stirring them in. either way works; it depends on whether you want smooth or chunky queso. both taste amazing!
