Simple 'n Sweet Corn Bread

gluten-free, dairy-free!
ingredients:
- 1 cup corn meal
- 1 cup gluten-free all purpose flour
- 1/2 tsp salt
- 1/3 cup organic cane sugar
- 1/3 cup brown sugar
- 4 tbsp melted vegan butter + 2 tbsp
- 2 eggs
- 1 cup unsweetened cashew or almond milk
- 1 tsp apple cider vinegar
- 1/2 tsp baking soda
instructions:
- preheat oven to 425 and prepare a 9 x 9 baking pan with no-stick cooking spray
- pour milk into a small bowl and add vinegar; let sit
- combine flours, salt, baking soda, and sugars in a mixing bowl
- add milk to dry mix and stir; add 4 tbsp melted butter and egg and mix again
- add 2 tbsp of cold butter to your pan and place in the oven for 2 minutes or until melted
- remove pan from oven and pour mixture into the center. watch as the melted butter is pushed to the edges of the pan to form those yummy, buttery, crispy edges!
- bake for 20-23 minutes or until an inserted toothpick comes out clean
