
Shrimp Pasta Primavera

Ingredients
shrimp
- 1 lb EZ peel shrimp
- 2 tbsp plant butter
- sea salt & cracked black pepper to taste
pasta
- 10 oz penne or bowtie pasta
- 1 tbsp EVOO
- 4 garlic cloves, minced
- 1 yellow squash, chopped
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup thinly sliced red onion
- 1 tsp sea salt
- 1/2 cup frozen peas, thawed
- 1 medium red bell pepper
- 1/2 cup diced asparagus
- 1/2 cup vegan parmesan cheese, grated
- 1/2 tsp red pepper flakes
- 1 tsp Italian seasoning
- 3 tbsp fresh lemon juice
- 2 tbsp fresh parsley
- sea salt & cracked black pepper to taste
Instructions
- in a large, deep skillet set to medium high heat, add butter. once melted, add shrimp and cook for 1.5 - 2 min on each side. remove from skillet, cover, and set aside
- bring a large pot of water to a boil and add 1 tbsp sea salt. add pasta and cook according to instructions (but drain about 2 minutes before actual cooking time)
- add olive oil to same deep skillet and set to medium high heat
- add red onion, zucchini, squash, asparagus, bell pepper and sauté for 3-4 minutes; season with salt, pepper, and red pepper flakes
- add tomatoes, garlic, and Italian seasoning and sauté everything for 2-3 more minutes
- add pasta, shrimp, peas, lemon juice, and parmesan cheese to the veggies and toss well until cheese is completely melted; serve with fresh parsley on top!
