Sesame Cashew Chicken Stir Fry

Ingredients:
for the sauce:
- 2 tbsp cashew butter (or peanut butter)
- 3 tbsp coconut aminos or liquid aminos
- 2-3 cloves garlic, minced
- 2 tbsp agave nectar
- 1 tsp sesame oil
- 1 tbsp ginger, minced
- 2 - 3 tbsp water
chicken and veggies:
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breast, chopped
- 2 cups brussels sprouts, halved
- 1 red bell pepper, julienned
- 1 cup sugar snap peas
- 1/2 cup carrots, julienned
- 1/3 cup dry roasted cashews
- garlic salt & cracked black pepper to taste
- 3 stalks green onion
Instructions:
- mix sauce ingredients together in a bowl and set aside
- add olive oil to your skillet set to medium-high heat
- add chicken and season with garlic salt & pepper. cook for about 5 minutes
- add bell pepper, brussels sprouts, snap peas, and carrots to your skillet and cook together for 5 more minutes until veggies start to get tender
- add cashews, green onion, and sauce and continue to cook. let the sauce simmer and thicken for about 2-3 more minutes. ensure your chicken chunks are cooked through and you're all done!
