Ingredients:

for the sauce:
chicken and veggies:
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, chopped
  • 2 cups brussels sprouts, halved
  • 1 red bell pepper, julienned
  • 1 cup sugar snap peas
  • 1/2 cup carrots, julienned
  • 1/3 cup dry roasted cashews
  • garlic salt & cracked black pepper to taste
  • 3 stalks green onion

Instructions:

  1. mix sauce ingredients together in a bowl and set aside 
  2. add olive oil to your skillet set to medium-high heat
  3. add chicken and season with garlic salt & pepper. cook for about 5 minutes
  4. add bell pepper, brussels sprouts, snap peas, and carrots to your skillet and cook together for 5 more minutes until veggies start to get tender
  5. add cashews, green onion, and sauce and continue to cook. let the sauce simmer and thicken for about 2-3 more minutes. ensure your chicken chunks are cooked through and you're all done!
