Savory Stuffed Roasted Squash

ingredients:
roast the squash
- 2 acorn squash, halved
- drizzle of olive oil
- sea salt & cracked black pepper
ground turkey
- 1 lb 93 lean ground turkey
- 2 tsp Italian seasoning
- 2 tsp dried rosemary
- 2 tbsp tomato paste
- 1/2 tsp garlic salt
- 1 tbsp avocado or olive oil
- 1 medium onion, chopped
- 1 can fire roasted diced tomatoes
- 2 cloves garlic, minced
- 1 tbsp coconut aminos
- 2 cups fresh chopped spinach
- cracked black pepper
- 1 cup sliced mushrooms
- 1 cup vegan mozzarella cheese shreds
instructions:
- preheat oven to 450 degrees
- foil a large pan and place and drizzle acorn squash halves with olive oil and sprinkle with salt & pepper
- place them skin side down on your pan and bake for 30 minutes

- in a large skillet set to medium heat, add olive oil.
- add onion and garlic to your pan and stir it around until fragrant, about 1-2 minutes.
- add ground turkey and break it up/spread it out with your spoon as it browns and cooks.
- add seasonings, can of tomatoes, spinach, and mushrooms and combine well.
- let this mixture simmer until it is cooked through, about 4- 5 minutes

- once squash is roasted and ready, remove them from oven and scoop ground turkey mixture evenly into the center of each squash.
- top them each with your cheese of choice, and put them back into the oven for another 20 minutes

- finally remove the squash from the oven and top with fresh green onion
