Turkey Sausage & Peppers Pasta Bowl

a family favorite! one bowl wonder filled with juicy turkey sausage, veggies, and cheesy pasta.
ingredients:
- 1 box rotini veggie pasta, cooked
- 2 tbsp dairy-free butter
- 2 tsp garlic salt seasoning
- 1 tbsp olive oil
- 1 red bell pepper, julienned
- 1/2 yellow onion, julienned
- 1 cup sliced baby portobello mushrooms, sliced
- 1 cup raw baby spinach
- 1/2 cup dairy-free mozzarella shreds
- 4 links of Turkey Sausage , sliced (i use this kind)
- sea salt & cracked black pepper to taste
instructions:
How to cook Turkey Sausage & Peppers Pasta Bowl
- boil a pot of water and add a dash of sea salt. once boiling, add pasta and cook according to the box's directions (or your preferred texture)
- heat a large skillet over medium heat and add olive oil
- once hot, throw in your onion, bell peppers, salt, pepper. and sauté them until caramelized for about 3-5 minutes; lower heat if need be
- add sliced sausage and cook for 3-4 minutes on each side or until almost cooked through
- add in a tbsp of dairy-free butter and the sliced mushrooms; cook until mushrooms are tender
- drain pasta and add back into the pot (solo) along with butter and garlic salt seasoning. mix well
- now, transfer pasta to your pan with the sausage and peppers mixture and add the spinach. toss and combine while the spinach wilts just a little
- top with cheese and place pan under broiler until cheese melts (or you can add the cheese to the individual servings only)
