Sausage Egg & Cheese Muffin

start your mornings off at home and skip the drive thru with these whole grain, protein packed breakfast sandwiches.

Ingredients

  • 6 whole eggs, beaten
  • 2 tbsp light vegan butter or buttery spread, melted
  • 1/2 cup cooked lean turkey sausage, crumbled
  • 1/2 cup lactose-free shredded cheese of choice
  • 1/2 cup non-dairy milk
  • sea salt & cracked Black pepper to taste

Instructions

  1. whisk all ingredients together in large mixing bowl.
  2. coat a 9x9 baking dish with no stick cooking spray and pour mixture into pan. 
  3. bake for 18-20 min on 350 degrees until set* in the center. 
  4. once cooled, grab your coffee mug and carve out your patties.

if it bubbles up it's totally ok! just let it sit after you take it out of the oven and it will fall flat into 1 layer again as it cools. 


if you used egg whites the nutritional stats would be as follows:

calories: 125

fat: 8g

protein: 12g


I typically use a 100 calorie multigrain muffin for this sandwich!


▶️these will keep for up to 1 month in the freezer (wrap them tightly)

▶️Save time by combining 3 layers into 1; omit any ingredient and customize it to your child.

▶️use a coffee mug to cut out your cooked ‘patties’
