
Salted Chocolate Brookies

Ingredients
- 1/2 cup + 2 tbsp GF oat flour
- 7 oz dairy-free chocolate, chopped
- 1/3 cups unpacked light brown sugar
- 1/3 cup organic cane sugar
- 1/4 cupdairy-free butter
- 1/2 tsp vanilla extract
- 1 tsp instant coffee granules
- 2 eggs
- 2 tbsp unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- flaky or rock salt for topping
Instructions
- preheat oven to 350 degrees and line a 9 x 13 baking pan with foil or parchment paper
- sift flour, baking powder, cocoa powder, salt into a bowl and set aside.
- add sugar, eggs, and vanilla into a stand mixer bowl and blend on high for at least 4-5 minutes until frothy
- microwave chocolate and butter in 15-20 sec increments until melted (in a microwave safe bowl). mix until smooth.
- fold the chocolate mixture into the frothy egg mixture a little at time until combined...make sure mixture is warm but not hot.
- now, fold the chocolate mixture into the flour mixture until just combined. be careful not to over mix!
- the cookies will spread slightly but if you pop the dough into the fridge for 20 minutes first, the batter will firm up and the cookies will hold their post-baked shape. If you don’t care about aesthetics, bake away and devour immediately!
- drop 1-2 tbsp sized dough balls onto the baking pan 2-3 inches apart and bake for 11 minutes. i hear they make great ice cream sammiches :)
