Ingredients

  • 2.5 cups shredded or chopped rotisserie chicken breast
  • 1/3 cup celery, diced
  • 1 cup chopped grapes, halved (any color)
  • 1/4 cup chopped green OR minced red onion
  • 1 cup lactose-free greek yogurt
  • 2 heaping tbsp light mayo
  • 1/4 cup chopped pecans OR walnuts
  • 1/2 tsp garlic powder
  • 1/2 tsp garlic salt
  • 1-2 tbsp fresh lemon juice
  • sea salt & cracked black pepper to taste
  • 2 chopped boiled egg whites (optional!)

Instructions

  1. to a large mixing bowl, add chicken, celery, onion, nuts, yogurt, and mayo
  2. add seasonings and drizzle lemon juice over all ingredients
  3. mix until combined well
  4. put it in the fridge to chill until ready to eat! serve with multigrain crackers or on top of whole grain bread

Notes

i love and recommend Fage lactose-free Greek yogurt for this recipe.
