
Roasted Balsamic Brussels Sprouts

Ingredients
- 1 lb fresh brussels sprouts, halved
- 2 slices bacon, roasted*
- 2 tsp olive or grapeseed oil
- sea salt to taste
- cracked black pepper to taste
- 1 tbsp balsamin vinegar
- 1/4 cup dried cranberries (no sugar added)
Instructions
- preheat your oven to 400 degrees.
- clean your brussels sprouts very well by slicing off the stem and then cut them in half. discard any spoiled leaves and add them to a colander to rinse /dry.
- see notes below for roasting bacon.
- once the bacon is cooled and crisp, break/crumble it and set it aside.
- add cleaned brussels sprouts to the baking pan and toss them around in the bacon fat. add 2 tsp olive or grapeseed oil along with sea salt and pepper. roast for 20 minutes.
- remove pan from oven and add brussels sprouts to a serving bowl. drizzle sprouts with balsamic vinaigrette while hot and sprinkle the cranberries and bacon crumbles on top.
- add sea salt and pepper once more and enjoy!
Notes:
*preheat your oven to 400 degrees and line your pan with foil. lay the strips of bacon out flat and bake them for 10 min. once done, remove them from your pan and do not drain the fat! you will add the cleaned, halved brussels sprouts to the pan and and toss them in the bacon fat to flavor them!
