Ingredients

  • 3 medium sweet potatoes, peeled & cubed (bite sized)
  • 2 tbsp red thai curry paste
  • 2 tbsp grapeseed oil
  • 1/2 tsp garlic salt blend
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • sea salt & cracked black pepper to taste

Instructions

  1. preheat oven to 400° and coat a large baking pan with non-stick cooking spray
  2. add sweet potatoes to a large mixing bowl
  3. in a small separate bowl, combine oil and curry paste
  4. pour mixture over potatoes then sprinkle everything with garlic and onion powders
  5. toss mixture around to coat the potatoes well
  6. pour coated potatoes onto your baking sheet in one even layer
  7. bake for 20 min, take them out, shake pan around, then place back into the oven for 5 more minutes
