ingredients:
- 1/4 cup red curry paste
- 1 can light coconut milk
- 1 tsp sesame oil
- 3 tsp olive oil
- juice of half a lime
- 2 tsp fish sauce (optional)
- 1 tsp ginger, minced
- sea salt & cracked black pepper
- cashews and green onion for garnish
instructions:
How to cook Red Curry Salmon
- to a medium heated pan, add oils.
- add ginger and stir until fragrant, about, 30 seconds.
- add curry paste and stir until fragrant, about 30 seconds.
- once bubbling, add coconut milk, fish sauce, lime juice, and season generously with sea salt & cracked black pepper.
- once bubbling again, add fillets, skin side down.
- let the fillets simmer in the sauce (spoon the sauce onto the fillets every few seconds) for 10-11 minutes (or until desired texture).
- garnish with green onion & roasted, unsalted cashews!
