How to cook Red Curry Salmon

  1. to a medium heated pan, add oils.
  2. add ginger and stir until fragrant, about, 30 seconds. 
  3. add curry paste and stir until fragrant, about 30 seconds.
  4. once bubbling, add coconut milk, fish sauce, lime juice, and season generously with sea salt & cracked black pepper.
  5. once bubbling again, add fillets, skin side down.
  6. let the fillets simmer in the sauce (spoon the sauce onto the fillets every few seconds) for 10-11 minutes (or until desired texture).
  7. garnish with green onion & roasted, unsalted cashews!
