Ingredients

  • 2 1/4 cups old fashioned oats
  • 1.5 bananas, ripe
  • 1 cup non-dairy milk of your choice
  • 3 eggs
  • 2 tbsp brown sugar, packed 
  • 2 tbsp corn starch
  • 2 tsp vanilla
  • 1 tbsp flaxseed meal
  • 1/4 cup melted coconut oil
  • 3 tbsp melted vegan butter
  • 1 tsp pumpkin spice (or cinnamon)
  • 1 tbsp baking powder 
  • 1/2 tsp salt 

Instructions

  1. add all ingredients to your high powered blender
  2. blend for 60 secs until super smooth
  3. cook waffles according to your waffle maker's instructions
  4. enjoy!

Notes:

make sure to coat your waffle maker with no stick cooking spray first.

cooking times vary depending on your waffle maker.

nutritional stats are for 1 waffle.

2 minutes per waffle (60 seconds on one side, approx. 45 secs on the other)
