Ingredients
batter
- 2 cups flour (I like spelt or oat)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp pumpkin pie spice
- 2 tsp vanilla
- 1/2 cup pumpkin puree
- 1/2 cup pure maple syrup
- 1/3 cup vegan butter, melted
- 3 small bananas, ripe
- on top:
- 1/3 cup dairy-free chocolate chips
- 1/3 cup pecan pieces
Instructions
- preheat oven to 350 degrees
- sift flour, baking powder, baking soda, salt, cinnamon, ginger, pumpkin spice together in a bowl
- coat your bread pan in no stick cooking spray and pour 2 tbsp of melted butter into the pan cause #crispyedges
- whisk bananas, puree, maple syrup, vanilla, and remaining butter together in a separate bowl
- combine wet and dry ingredients together (don’t over mix)
- pour batter into bread pan
- top with chocolate chips and pecans
- bake for 35-40 minutes or until a toothpick inserted into the very center of the loaf comes out clean
