- 1.5 cups oat flour*
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup organic cane sugar
- 1/4 cup brown sugar
- 1/2 cup canned pumpkin
- 1/2 cup mashed banana
- 1/2 cup pecans, chopped
- 1/2 cup dairy-free chocolate chips
- 1/3 cup coconut oil
- 1/2 cup dairy-free vanilla yogurt
- 1 tsp vanilla
- 1 egg, room temp

How to cook Pecan Pumpkin Banana Bread
- preheat your oven to 350 degrees and prepare a bread pan with wax paper lining the bottom and sides
- combine all ingredients EXCEPT pecans and chocolate chips into your food processor OR just mix well by hand (i did!) until smooth (or slightly chunky
- gently fold in pecans and chocolate chips into the batter and pour mixture into your prepared pan. use a spatula to scrape it all out!
- bake for 30 minutes and shut off your oven, but don't open the door. let pan sit for 10 more minutes before you remove it from the oven
- once cool, cut loaf into 8 - 10 slices
NOTES:
you can make your own oat flour by simply grinding old fashioned oats into a flour-like consistency using your high powered blender or food processor.
