Pecan Branana Bread Crunch

warm, buttery, crunchy, banana-y! filled with fiber and great for breakfast on-the-go.
ingredients:
- 1 cup oat flour (I make my own)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup 100% bran cereal
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 2 eggs
- 1 cup mashed banana (3 small bananas)
- 1/4 cup light buttery spread
- 1/3 cup organic sugar cane
- 1/2 cup pecans *
instructions:
preheat oven to 350 and prepare a loaf pan by coating it with no stick cooking spray
- dump all ingredients EXCEPT pecans into your food processor or high powered blender and blend until smooth
- sprinkle in pecans and mix; pour mixture into prepared pan and bake for 42-45 minutes or until an inserted toothpick comes out clean
- enjoy with some dairy-free butter on top!
NOTES:
*you've gotta toast your pecans! it makes aaaall the difference in this bread's flavor and texture.
