Pecan Apple Crisp

Ingredients

apple filling
  • 5 honeycrisp apples, peeled and cored
  • 1 tbsp plant butter (the stick, not the spread), melted
  • 1/3 cup maple syrup
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • dash of salt
crust
  • ½ cup almond meal
  • ½ cup all-purpose GF flour
  • ½ cup oats
  • 2 tbsp brown sugar
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 1/3 cup chopped pecans (optional)
  • 2 tbsp coconut oil, solid
  • 2 tbsp butter, cold

Instructions

  1. Preheat the oven to 350F and coat a 9-inch pie dish with cooking spray
  2. Combine the apples, butter, cinnamon, vanilla, & salt in a mixing bowl
  3. in a separate bowl, prepare the topping by combining all the ingredients, except the coconut oil, and mix well. Add the coconut oil and work it with your hands, until it's well incorporated.
  4. Transfer the apple filling to the pie dish to your coated pan, sprinkle the topping on top, and place the pie dish on a baking sheet, (in case the juices from the spill out.) place in on the lower rack of the oven and bake for 40 minutes.
