Pan Fried Zucchini Fritters

ingredients:

  • 3 large zucchini, shredded
  • 3 green onion stalks, chopped
  • 1/2 cup almond meal 
  • 1/2 cup dairy-free parmesan cheese
  • 2 eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp curry powder
  • 2 tbsp coconut aminos
  • 1 tsp cracked black pepper 
  • olive oil for "frying"

instructions:

  1. grate zucchini onto a cup towel or cheesecloth.  do your best to squeeze all the water out of the zucchini. too much water leaves them soggy and makes it harder for the fritters to crisp up.
  2. add all ingredients to a large mixing bowl and incorporate well
  3. coat a large skillet with no stick cooking spray and set it to high heat.  place 2 tsp of olive oil in the pan once heated
  4. place several heaping spoonfuls of zucchini mixture onto the hot skillet and press it down flat.  make sure they aren't touching; they will each expand a little though. 
  5. after 45 seconds to 1 minute, set the heat to low and cook for approximately 5-7 more minutes or until each side is golden brown
