Oatmeal Cream Pies

JUST like the ones you grew up eating but no dairy, less sugar, calories, and carbs!
ingredients:
cookie batter
- 1/2 cupspelt flour
- 1/2 cup white wheat all purpose flour
- 1 tsp vanilla extract
- 1/2 cup brown sugar + 2 tbsp (packed)
- 3 tbsp dairy-free milk
- 1/2 cup melted dairy-free butter or margarine
- 2 tsp unsweetened cocoa powder
- 1 whole egg, room temp
- 1 cup rolled oats
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
cream filling
- 2 1/2 cups powdered sugar
- 2 tbsp dairy-free milk
- 1 tsp vanilla extract
- 1/2 cup softened vegan butter or margarine
instructions:
- preheat oven to 350 and coat a large baking pan with parchment paper or coat it with no stick cooking spray
- in a mixing bowl, cream together melted butter, brown sugar, vanilla, and milk
- add egg and mix once more
- in a separate mixing bowl, add flours, oats, baking powder, baking soda, salt, cinnamon, cocoa powder; mix well
- add the dry mixture into the wet mixture and stir until just combined
- drop small dough balls onto your pan (about 2 tsp worth)
- bake for 8-9 minutes*
- let cookies cool completely before transferring them or assembling the sammiches!
NOTES:
i fit 12 cookies comfortably onto my pan at once. mix the cream filling with a hand mixer while the cookies are baking and refrigerate it immediately.
