Crunchy Dipped Oatmeal Chocolate Chip Energy Bites

THE perfect crunchy sweet snack full of oats and good fat!
ingredients:
- 1 cup rolled oats
- 1/4 cup light agave nectar
- 1/2 tsp vanilla
- 1/3 cup dairy-free chocolate chips
- 1/4 cup almond, cashew, or peanut butter
- 1/4 cup flaxseed meal
- 2 tbsp chia seeds
- pinch salt
- melted chocolate for dipping or drizzling!
instructions:
How to cook Crunchy Dipped Oatmeal Chocolate Chip Energy Bites
- combine all ingredients in a large mixing bowl
- let mixture sit for about 10-15 minutes in the freezer first so rolling is tons easier
- foil or set out wax paper on a large baking pan
- form mixture into bite sized balls with your hands
- dip or drizzle bites with melted chocolate*
- place bites onto baking sheet then into the fridge (or freezer = faster) to harden
- enjoy!
NOTES:
i melt approx. 1/3 cup chocolate chips + 2 tsp coconut oil in a microwave safe bowl in 15 second increments.
