A filling, one-pan, family meal perfect for Sunday dinner or any night of the week.

Ingredients

  • 12 oz pasta of choice (I used rotini)
  • 2 cups cooked rotisserie chicken
  • 1 14.5 oz can diced tomatoes with green chilies
  • 2 1/2 cups low sodium chicken broth
  • 1/3 cup low sugar BBQ sauce
  • 1 cup shredded lactose-free cheddar *see notes
  • 4 strips cooked, crumbled bacon
  • 1 stalk green onion, chopped
  • sea salt & cracked black pepper to taste

Instructions

  1. In a large skillet, add uncooked pasta, tomatoes, and chicken broth. cover; once boiling, reduce to a simmer. check pasta around 10-12 minutes until al dente.
  2. once pasta is done, add chicken & bbq sauce and stir until combined.
  3. shut off the heat and sprinkle cheese all over the top. cover; once cheese is melted, sprinkle dish with bacon and green onion.

Notes

Cracker Barrel's Sharp Cheddar cheese block is lactose-free and is what I love to use for this recipe.
