Milk Makin' Vegan Chocolate Chip Cookies

you'd NEVER know these are lactation cookies, mamas! they are incredibly delicious, GF, vegan, and the perfect, healthy, sweet snack for nursing moms.
Ingredients
cookie batter
- 1 cup organic spelt flour (or 1 cup 1:1 gluten-free flour)
- 1 cup GF rolled oats
- 3/4 cup organic cane sugar or coconut sugar
- 4 tbsp coconut oil
- 1/2 cup water
- 4 tbsp ground flaxseed
- 1/2 cup honey roasted peanut butter
- 2 tbsp de-bittered brewers yeast
- 1 tsp organic vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp pink himalayan sea salt
- 1/2 cup dairy-free chocolate chips
Instructions
- preheat oven to 350 degrees and coat a large pan with non-stick cooking spray (or line parchment paper)
- combine dry ingredients (flour, oats, salt, sugar, yeast, baking soda) together in a large bowl
- in a small bowl, add ground flaxseed and water. set aside for 5 minutes as you continue on
- in another small bowl, melt peanut butter in the microwave in 25 sec increments (should only need 2, max 3); whisk in oil & vanilla and combine until smooth
- add peanut butter mixture and flaxseed mixture to the dry mixture; begin by stirring slowly until dough just comes together. add chocolate chips (save a few for the cookie tops!)
- spoon about 2 tbsp of dough into your hand and roll into a ball. place the ball on the pan and press down slightly (add those chocolate chips on top now)
- bake for 11-12 min on 350 degrees
